14.01.2022 #TRANSFORMATIONTUESDAY Vietnamese Beef Curry! Delicious Slow Cooked Recipe. RECIPE... 1.2 kg beef cuts (we used brisket) cut into 2.5cm cubes 3 tbsp curry powder 2 tsp ground turmeric Pinch of cayenne pepper 1 tbsp coconut sugar (optional) Sea salt and freshly ground black pepper 2 tbsp coconut oil 4 shallots, chopped 1 carrot 4cm piece of ginger, finely chopped 5 garlic cloves, sliced 450 ml beef stock 3 tbsp fish sauce 300 ml lite coconut cream 1 large handful of spinach leaves 1 large handful of mint leaves Lime wedges to serve Combine beef with curry powder, turmeric, cayenne pepper and coconut sugar (if using) in a bowl and season with salt and pepper. Toss to combine, cover and marinate for 15 min. Melt 1 tbsp of the oil over medium-high heat, add shallots and carrot and cook for 4 minutes until slightly soft. Stir in ginger and garlic and cook for a further 1 min until the garlic starts to colour and is fragrant. Remove and set aside. Melt the remaining oil over medium-high heat and add the marinated beef, cook for 5 minutes until well browned. Add the garlic, shallot, ginger and carrot to the pan. Pour in the beef stock and fish sauce and bring to a simmer. Transfer all the ingredients into a slow cooker and cook on low for 10-12 hrs. Stir in coconut cream, cover and cook for a further 30 min. Season the curry with salt and pepper, if needed, and fold in spinach and mint leaves. Serve with lime wedges on the side. 09.01.2022 #MOTIVATIONMONDAY My Body Transformation... the photo on the left shows me at 115kg, the heaviest, and most depressing time of my life. I was unhealthy, unmotivated and completely lost. I had identified myself as a personal trainer, had dedicated years of my life to studying health and fitness and invested over $20,000 into my career in the industry. And yet I was obese and spent the past couple years binge eating and watching my stomach expand to the point where stretch mark...s scarred my body.... how humiliating. I was the exact opposite of what I was supposed to be. I hated myself and I wanted to DIE. Soon my relationship started to take a turn for the worst and my partner couldn't deal with my depressive behaviour for much longer... she decided to leave and in that moment.... I SNAPPED. It wasn't a complete eye opening, awakening, rocket to success experience... but in that moment I knew I had to make some changes! So I begged her to take me back and from then on I started to make a conscious decision to continually grow stronger. It hasn't been easy but I've managed to lose 20 kilos, married the girl of my dreams (yes, that very same girl), started my own business and alongside my beautiful wife... am about to embark on the journey of parenthood. [NOW] I feel healthy and full of energy, my strength has improved, even my hair, skin and nails are looking better... but more importantly, I feel that I now have the confidence to help others. It seems that life unravels in such a way that in time... even the worst events in life can be part of something [BIGGER]. It definitely hasn't been an easy road, but with a strong drive and persistence anything is possible... [JUST KEEP GOING.]
