Frozen shoulder (shoulder adhesive capsulitis) is a chronic condition in which scar tissue builds up around the shoulder joint, causing progressive pain and reduced ability to move the shoulder. 23.01.2022 BEAUTIFUL BEETROOT SALAD INGREDIENTS 1. 4 x large beetroot bulbs (Quick option 1 x 450g tin of baby beets) 120g rocket and/or baby spinach leaves... 80g Greek Feta 2 tbsp extra virgin olive oil 1 tablespoon balsamic vinegar cup walnuts (roughly chopped) METHOD 1. Preheat oven to 200C. Use a fork to prick beetroot. Place on baking tray and bake for 45minutes or until tender. Once cooked peel and cut into quarters. (Quick option Use tinned beetroot rinse well and cut into quarters. 2. Combine the rocket/spinach leaves and beetroot in a serving bowl. Crumble Greek Feta over the top and sprinkle with roughly chopped walnuts. 3. Combine olive oil and balsamic vinegar in a jug and drizzle over the top to serve. 4. 21.01.2022 CHARGRILLED HALLOUMI SKEWERS INGREDIENTS 2 red capsicums, quartered and seeded. 2 zucchini thinly sliced length ways... 250g butternut pumpkin, thinly sliced 1 small eggplant, thinly sliced into rounds 2 tsp fresh thyme leaves 2 TB garlic infused extra virgin olive oil 200g cherry tomatoes 175g Mini capsicums 200g Halloumi cut into 1cm thick slices Lemon juice to serve METHOD: 1. Place red capsicum, zucchini, pumpkin, eggplant and thyme leaves in a large bowl. Drizzle with 1 TB of the Olive oil. Toss to coat. 2. Heat Barbeque grill or griddle pan over high heat. Cook red capsicum for 4-5 mins or until tender and skin is blackened and blistered. Transfer to a bowl and cover with cling wrap. Set aside (this will make the skins easy to peel off when you are ready to assemble). 3. Add pumpkin, eggplant and zucchini to grill. Cook until tender and charred (2-3 mins each side for zucchini/eggplant and 3-5 mins each side for pumpkin). Remove from grill. 4. Add tomatoes and mini capsicums to grill and cook for another 2-3 minutes. Remove from grill. 5. Finally, add halloumi slices to grill and cook for about 1 minute on each side. 6. 16.01.2022 CHRISTMAS RECIEPE - HEALTHIER GINGERBREAD PEOPLE... INGREDIENTS - 280 g (2 cups) almond meal - 1 teaspoon ground cinnamon ... - teaspoon ground nutmeg - teaspoon ground ginger - teaspoon gluten free baking powder - 4 (60 g) fresh soft pitted dates - 50 ml extra virgin olive oil - 40 g honey or proper maple syrup - 1 teaspoon vanilla bean extract - 1 egg white METHOD 1. Preheat the oven to 150*C. 2. Combine almond meal, baking powder, dates and spices in a food processor. Process until combined and mix is crumbly. 3. Add olive oil, honey, vanilla & egg white and process into a soft dough. 4. Remove the dough from the food processer and roll into a ball. Then place between 2x pieces of baking paper and flatten out to about 3mm thick. 5. To allow the dough to firm, rest in the fridge for 1 hour or freezer for 20 mins. 6. Remove from fridge/freezer and cut into desired shapes (use a cutter or stencil for consistency). 7. Bake for 30 mins or until golden. 8. Remove from the oven and cool before decorating. The late Dr Karyn Purvis, Director of Texas Christian Universitys Child Development Centre has stated: Scientist have recently determined that it takes approximately 400 repetitions to create a new synapse in the brain unless it is done with play, in which case, it takes between 10 and 20 repetitions. This is a great statement to further support the importance of play to learn a new skill in a fun and engaging way. To make pesto: place spinach, basil, almonds and garlic in a food processor. Process until finely chopped. Gradually oil and parmesan. Process to form a thick paste. 2. Cook pasta in a large, deep pan of boiling water for 10 to 12 minutes or until just tender (al dente). Drain and return to same pan. 3. Add spinach pesto to pasta. Earlier today we posted our grilled chicken scewers and now we are giving you our chilli con carne! Ingredients ... o Olive oil to fry o 1 large onion, chopped o 1 capsicum, chopped o 1 x 400g tin of chopped tomatoes o 2 x 400g tin of baked beans or kidney beans/mixed beans o 500g frozen mixed, diced vegetables o 1 tsp. garlic powder o 2 tsp. chilli powder, more if you like it hot o 1/2 tsp. cumin powder (optional) o 1 vegetable stock cube o 1 tbsp. tomato puree To serve with 2 cups cooked brown rice (1/2 cup per person) Method 1. Heat the oil in a frying pan and add chopped onions and capsicum. Fry until soft. 2. Add tomatoes, baked beans, frozen mixed vegetables, tomato puree, stock cube, garlic, chilli and cumin powder, cook on a low heat for 20 minutes, stir occasionally. 3. 05.01.2022 FACES OF OPTIMUM - FUN FACTS Hi, my name is Paige. I am 5 and live in Gagebrook with my mum and dad and two brothers. I just had my birthday, which was a fairy and unicorn party and I got a unicorn balloon for my birthday. I love going on the climbing wall and swings at Optimum. I can climb to the top of the wall now, which is higher than my brother. I go swimming and do tricks in the water. I am very determined and love splashing around in the pool and prancing like a pony. My favourite thing to do is tumbles in the water and the new paediatrics gym at Optimum in Tasmania. My mum loves to bring me to swimming and to play in the gym as she can see that it helps me move better and concentrate for longer.

03.01.2022 Peach and Quinoa Salad INGREDIENTS - 2 tsp olive oil - Cup (100g quinoa)... - 75g baby rocket leaves - 150g dried apricots, cut into strips - 2 small celery sticks, thinly sliced - 1 ripe white peach or nectarine, pitted, cut into thin wedges - 2 spring onions, thinly sliced diagonally - 1/3 cup (60g) pecan halves, toasted, chopped - Add boiled egg whites for extra protein VINAIGRETTE - 1/4 cup (40g) dried currants - 2 TB balsamic vinegar - 2 TB tawny port (optional) - 2 TB Orange Juice + 1 TB rind finely grated - 2 TB lemon juice + 1 TB rind finely grated, - 1/4 cup (60ml) extra virgin olive oil METHOD 1. Make the vinaigrette: combine the currants, vinegar, port, fruit juices and rind. Let soak for 30 mins. Stir in the oil. Season with salt and pepper. 2. Heat the 2TB oil in a small saucepan over medium-high heat. Add the quinoa and cook, stirring, for 2 mins or until quinoa is toasted. Add 1 cup (250ml) water and bring to the boil. Cover, reduce heat to low and simmer for 15 mins or until quinoa has absorbed liquid and is tender. Turn off heat, uncover and cool completely. 3. Assemble: Arrange the quinoa over a large platter. Top with the rocket, apricots, celery and peach or nectarine. Drizzle with vinaigrette. Sprinkle with spring onions and pecans.
