25.01.2022 OYSTERS WITH CHILLI & MINT INGREDIENTS: 1 TB Extra virgin olive oil 1 Cups fresh breadcrumbs... 4 anchovies finely chopped 1 clove crushed Garlic 1 small red chilli finely chopped 1 TB fresh mint leaves, chopped 24 fresh Oysters, in the half shell Lemon wedges to serve. METHOD: 1. Heat oil in a large frypan over medium heat. Add breadcrumbs, anchovies, garlic and chilli and cook for 6-8 minutes or until golden. 2. Remove from heat and let cool. Stir in fresh mint and season with salt and pepper. 3. Arrange oysters on a serving platter, and sprinkle breadcrumb mixture over oysters. Serve with lemon wedges. 25.01.2022 NON-SURGICAL TREATMENT Evidence has shown that non-surgical treatment, with exercise as the core component, for degenerative meniscus tears is effective in reducing pain and improving function (Sherman et al. 2020). Whilst majority of the literature on knee rehabilitation is derived from ACL research, rehabilitation of a meniscus tear is very similar to rehabilitation of an ACL tear or reconstruction, with the greatest differentiation being the consideration of compressive loading and range of motion in the knee. Meniscus tear type and severity will help to determine the speed of rehabilitation progression, with simple tears recovering faster compared to complex tears that can take more than 6 months for return to sports. 20.01.2022 SPINACH PESTO PASTA WITH CHERRY TOMATOES INGREDIENTS 100g baby spinach leaves 1/2 cup firmly packed fresh basil leaves... 2 tbs toasted slivered almonds 2 cloves garlic, crushed 2 tbs olive oil 1/4 cup shredded parmesan cheese 375g short pasta shapes (e.g. penne, fusilli, orrechiette) 250g punnet small cherry tomatoes, halved METHOD 1. To make pesto: place spinach, basil, almonds and garlic in a food processor. Process until finely chopped. Gradually oil and parmesan. Process to form a thick paste. 2. Cook pasta in a large, deep pan of boiling water for 10 to 12 minutes or until just tender (al dente). Drain and return to same pan. 3. Add spinach pesto to pasta. 17.01.2022 NICOISE SALAD INGREDIENTS 8 baby chat potatoes 320g grean beans topped and tailed ... 4 eggs 60ml of extra virgin olive oil red wine vinegar Pinch of sugar Tuna spoil yourself with fresh tuna steaks or use tined tuna in spring water 12 baby egg tomatoes, halved 2/3 cup kalmata olives 1 cup fresh parsley METHOD 1. Cook the potatoes in a saucepan of boiling water for 10 minutes or until just tender. Use a slotted spoon to transfer the potatoes to a chopping board. Halve. Add the beans to the pan and cook for 2-3 minutes or until bright green and tender crisp. Refresh under cold running water. Drain. 2. Meanwhile, place eggs in a saucepan of cold water. Bring to the boil over high heat. Reduce heat to medium and gently boil, uncovered, stirring occasionally, for 6-7 minutes. Drain and cool under cold running water. Peel and quarter. 3. Whisk together the oil, vinegar, mustard and sugar in a jug until combined. Season with pepper. 4. Heat a frying pan over medium-high heat. Add tuna and cook for 2-3 minutes each side for medium or until cooked to your liking. Transfer to a plate. Set aside for 5 minutes to rest. Flake the tuna into large pieces. 5. Divide the potato, beans, egg, tuna, tomato, olives and parsley evenly among serving bowls. Drizzle over the dressing. 15.01.2022 BEAUTIFUL BEETROOT SALAD INGREDIENTS 1. 4 x large beetroot bulbs (Quick option 1 x 450g tin of baby beets) 120g rocket and/or baby spinach leaves... 80g Greek Feta 2 tbsp extra virgin olive oil 1 tablespoon balsamic vinegar cup walnuts (roughly chopped) METHOD 1. Preheat oven to 200C. Use a fork to prick beetroot. Place on baking tray and bake for 45minutes or until tender. Once cooked peel and cut into quarters. 08.01.2022 REHABILITATION Rehabilitation of meniscus injuries can be split into 4 phases with the following goals: Phase 1 Pain control, reduction of swelling, regain full range in the knee joint, reactivate quadriceps muscles.... Phase 2 Restoration of >70% strength in the hamstring and quadriceps muscles, bodyweight squat to 75 degrees without pain, climb stairs without pain, able to balance on affected leg for >30 seconds Phase 3 Strength training to achieve >80% strength of affected leg, dynamic balance and stability training, low speed agility and plyometric drills eg. skips, shuffles, jogging, shallow jumping and landing, gentle change of direction, re-introduction of sport-specific movements. In judo, the elbow joint can be dislocated if the athletes arm has been pulled and twisted with excessive force, or hyperextended while grappling with the opponent during groundwork or newaza.... KNEE The knee joint is another hinged joint in our body that can only flex and extend, with very minimal amount of rotation available. During Judo sparring, a lot of throwing techniques involve an opponent hooking the athletes knee to throw him off balance, which if the athlete does not counter this movement, can end up falling over his knee in a twisted position, which results in meniscus tears or in worse cases, a rupture in the anterior cruciate ligament or ACL. (PS: The meniscus is a crescent-shaped cartilage that is located inside the knee joint to help shock absorption and reduce friction during movement in the knee we have two meniscii in each knee. 01.01.2022 Peach and Quinoa Salad INGREDIENTS - 2 tsp olive oil - Cup (100g quinoa)... - 75g baby rocket leaves - 150g dried apricots, cut into strips - 2 small celery sticks, thinly sliced - 1 ripe white peach or nectarine, pitted, cut into thin wedges - 2 spring onions, thinly sliced diagonally - 1/3 cup (60g) pecan halves, toasted, chopped - Add boiled egg whites for extra protein VINAIGRETTE - 1/4 cup (40g) dried currants - 2 TB balsamic vinegar - 2 TB tawny port (optional) - 2 TB Orange Juice + 1 TB rind finely grated - 2 TB lemon juice + 1 TB rind finely grated, - 1/4 cup (60ml) extra virgin olive oil METHOD 1. Make the vinaigrette: combine the currants, vinegar, port, fruit juices and rind. Let soak for 30 mins. Stir in the oil. Season with salt and pepper. 2. Heat the 2TB oil in a small saucepan over medium-high heat. Add the quinoa and cook, stirring, for 2 mins or until quinoa is toasted. Add 1 cup (250ml) water and bring to the boil. Cover, reduce heat to low and simmer for 15 mins or until quinoa has absorbed liquid and is tender. Turn off heat, uncover and cool completely. 3. Assemble: Arrange the quinoa over a large platter. Top with the rocket, apricots, celery and peach or nectarine. Drizzle with vinaigrette. Sprinkle with spring onions and pecans.
