A local venture to sustain their fishing industry & that of the oceans surrounding their island. Using quota management, nearly zero by-catch & traceability to authenticate each catch with fishermen filling in an extensive logbook stating time landed, species caught & location of catch. A great story & a beautiful fish.....see you tomorrow night

05.01.2022 just made some sustainable organic housemade oyster sauce, really cool, so much nicer than the bought oyster sauce. turned some of it into an organic garlic, turmeric, coriander root & oyster sauce paste.....now what to make with that....possibly a new dressing for a salad, or perhaps some of our beautiful blue cod from Chatham island with coconut cream, the new paste and lots of fresh herbs for Friday night fish & chips...mmmmmmmm

01.01.2022 Hi Leisa, our next and very last seasonal dinner for 2012 is on Saturday 22nd December - 8 courses of amazing organic food combining some of the flavours from my BCOZ days with some of the inspirations from this year, the summer harvest will abound. $105 per guest for food, you will need to book as the dinner is already selling fast....
