23.01.2022 http:// I love a good shepherds pie. Its just so comforting on a cold Winters evening. This version has all the flavour + love of a traditional pie with the goodness of vegetables galore! Even my meat loving husband adores it mushroom shepherds pie // 2 large carrots, grated ... 2 brown onions, chopped finely 350g mushrooms, sliced 100g kale, sliced 1 tbsp coconut aminos 2 tbsp olive oil 1kg sweet potato, diced 200g coconut cream 250ml veggie stock 2 tbsp tomato paste salt + pepper Pre heat oven to 180 degrees. Steam sweet potato until tender. Mash and add coconut cream, salt + pepper to taste. Place oil, onions, carrots, kale and mushrooms in a large frying pan and sauté for around 5 mins. Add tomato paste, coconut aminos and stock and bring to a gentle simmer. Cook for around 10 mins, stirring occasionally. Transfer to a casserole dish and top with mashed sweet potato. Pop into the oven for 30 mins. Enjoy! Marit x
23.01.2022 http:// This bread is pretty damn tasty. And super nutritious too! I usually slice + freeze half for a quick and easy lunch on the go Life Changing Bread // 1/2 cup pumpkin seeds... 2/3 cup LSA mix 1 cup nuts of choice 1.5 cups rolled oats 2 tbsp chia seeds 3 tbsp psyllium husks 1 tsp pink salt 1 tbsp honey or rice malt syrup 3 tbsp melted coconut oil 1.5 cups water Combine all dry ingredients. Whisk honey, oil and water together. Add to dry ingredients and mix well. Add more water if the dough is too thick. Pour into a lined baking dish and let sit for at least 2 hours or overnight. Pre heat oven to 175 degrees. Place bread in oven for 20-30 mins. Remove from pan, place upside down directly on the rack and bake another 30-40 mins. The bread is ready when it sounds hollow to tap! Let cool completely before slicing. This bread lasts for 5 days in the fridge and freezes well! Marit x
23.01.2022 http:// I love a warm salad. Something light yet hearty. Perfect for the changing of the seasons. If nothing else, promise me youll try the spiced pepitas... theyre completely addictive! warm buckwheat salad // 1 cup buckwheat kernels ... 2 tbsp olive oil 1 red onion, finely sliced 1/2 bunch kale, stalks removed + leaves finely chopped zest of one lemon 1/2 tsp garlic powder pink salt spiced pepitas / 1 tbsp olive oil I/2 cup pepitas 1/2 tsp paprika pinch of pink salt Place buckwheat in a saucepan with 1.5 cups of water. Bring to the boil, lower heat + simmer for 8 minutes. Drain and set aside. Sauté the onion in olive oil until translucent. Stir through the kale and cook for 1-2 minutes, until it has turned bright green. Add the cooked buckwheat, zest, garlic powder and a little salt. To make the pepitas, heat the olive oil in a frying pan on low heat. Add the pepitas and cook, stirring regularly, until they puff up a little. Stir through paprika and salt to taste. Remove from the heat and sprinkle over the buckwheat. I love throwing on some roasted broccoli or chunks of avocado to serve too! Enjoy Marit x

I love it alongside an abundance of greens while the rest of the tribe has it with rice Best Ever Dahl / 1 tbsp coconut oil... 1 brown onion, finely diced 3 garlic cloves, crushed 2cm fresh ginger, grated 1 tsp mustard seeds 1 tsp coriander powder 2 tsp cumin powder 1/2 tsp turmeric powder 1 tsp curry powder 1 cup red lentils, rinsed 2 cups diced pumpkins 3 cups stock salt + pepper to taste 4 fresh tomatoes, diced 3 handfuls baby spinach fresh coriander Gently fry onion in oil until soft. Add garlic, ginger and spices and stir until fragrant. Add lentils, pumpkin and stock. Cook on low, covered for around 30-40 mins until thick. Remove from heat and stir through tomatoes and spinach. Serve warm and top with coriander! Enjoy! Marit x

19.01.2022 http:// Ive recently become a little addicted to lentil soup. This recipe is incredibly simple and super delicious! I love making a big batch and enjoying it for lunch for several days. What better way to show yourself some love and prioritise your health... as mums we so often put ourselves last! Enjoy. simple lentil soup // 1 onion, diced... 4 garlic cloves, finely grated 1 cup brown lentils, soaked overnight 2 large carrots, diced 1 stalk celery, diced 1 large zucchini, diced 500ml water 500ml veggie stock splash of passata parsley to serve salt to taste Fry up onion in a little olive oil until translucent. Add garlic and fry for one minute. Add carrots + celery and cook for 2-3 minutes. Add lentils, water, stock and passata. Pop the lid on and simmer for around 30 mins, until the veggies and lentils are just tender. Add zucchini and simmer for another 10 mins. Season to taste. Marit x

17.01.2022 http:// This bowl of chilli goodness is one of my very faves at the moment. The rainbow of ingredients combine together to make a delicious + nutritious dinner. Its a great hearty dish to serve your meat loving friends plant based chilli bowl // 3 cloves garlic, minced ... 1 small brown onion, finely diced 1/2 head cauliflower, finely chopped 2 carrots, grated 2 zucchini, grated 2 tbsp olive oil 250g mushrooms, diced 250g drained black beans 150g tomato paste 2 tsp raw honey 1 tbsp apple cider vinegar 2 tsp ground cumin 2 tsp pink salt Pepper Sauté onion, garlic, carrots, zucchini and cauliflower in olive oil for around 10 minutes, until softened. Add remaining ingredients except beans plus a cup of water and simmer over medium-low heat, covered, for around 25 minutes until veggies are soft and mixture is reduced. Stir occasionally and add extra water if needed. Add black beans and heat until warmed through. Serve with rice, warm tortillas, zucchini noddles or on a bed of greens. 17.01.2022 http:// Im pretty lazy when it comes to lunch. More often than not, my babes and I walk in the door after a big morning of exploring + fun and were ravenous! Leftovers are most definitely my friend. Todays lunch was leftover sweet potato + quinoa patties from last nights dinner. I served mine in a @glutenfreeprecinct wrap with hummus, chilli sauce and salad. And it was DELISH! I loooove all of the @glutenfreeprecinct breads available through our co-op... which is your favou...rite?! sweet potato + quinoa patties // 800g (ish) sweet potato, cubed and steamed 1 cup cooked quinoa 1/4 cup chickpea flour 1/2 cup finely diced zucchini 1 tsp ground cumin 1 tsp paprika 1/2 tsp ground coriander pink salt + pepper to taste a handful of fresh herbs - optional Pre heat oven to 180 degrees. Mash sweet potato and combine with remaining ingredients. Shape into small patties and pop on a lined baking tray. Place in the oven for 20 mins. Flip and bake for another 10 mins. Serve warm. 15.01.2022 http:// I love simple, nutritious food that can be prepared in half an hour. This curry ticks all of the boxes and is easily adaptable to include your favourite veggies or whatever is left in the fridge. simple vegetable curry // 2 small potatoes, cubed... 2 tbsp coconut oil 1 brown onion, diced 2 cloves garlic, minced 1 eggplant, cubed 1 tin chickpeas, drained + rinsed 2 tbsp tomato paste 1 tbsp curry powder pinch of salt 250ml coconut milk Boil potatoes for around 15 mins, until tender. Drain and set aside. Fry the onion + garlic in the coconut oil for 2 minutes. Add the eggplant and continue to fry for another 15 minutes, until almost tender. Add remaining ingredients and cook for 10-15 minutes. Serve with steamed greens, quinoa or rice. Enjoy the simplicity Marit x

Tonight I popped in lots of fresh herbs from our garden along with leftover roasted + raw veggies. A big dollop of hummus topped it off! 14.01.2022 http:// I think sometimes we lose sight of the every day magic. In our lives and in our food. Im not big on huge gestures or fancy things. My heart is with the ordinary. With so many incredible supplements and superfoods flooding the market, its easy to forget the power of the classics. ... Take cucumber for example. They hydrate us at the deepest cellular level possible. Eaten daily, they help to reverse liver damage and have a cooling effect on our glands + organs. And did you know, theyre actually a fruit?! 06.01.2022 http:// Having a few ready made, nutritious snacks is a must at our house. Im the only one who loves this cauliflower slice so a big batch lasts all week! You can veganise the recipe by replacing the eggs with around 160g besan flour + a cup of water. curried cauliflower slice // 1/2 head cauliflower... 1 carrot 1/2 red capsicum 1 onion 2 cloves garlic olive oil 2 tsp curry powder handful frozen peas 6 eggs 1 tsp salt Pre heat oven to 200 degrees. Blitz the veggies (except peas) in your food processor until the consistency of rice. Combine all other ingredients and mix well. Pour into a lined baking dish and pop into the oven for 15-20 minutes, until cooked through. Enjoy! Marit x
