19.01.2022 I felt this one had to be shared, it's so easy to prepare and a great way to eat pork. This is how James cooks up a stir! Everything organic and fresh, made with the Large Black pork fillet, a marbled meat that is truly something different. Ingredients Organic Large Black pork fillet - sliced 5mm thick Lard or cooking oil... Corn flour Garlic Onion Chinese five spice Chinese cooking wine Oyster sauce Sesame oil Organic vegetables of choice Cooking two tablespoons of corn flour in a bowl, drizzle water in while mixing to milk like texture, mix pork fillet strips in bowl to lightly coat. chop vegetable to size that will cook quickly (3-4 minutes) Slice onions and crush garlic Heat the wok to very hot add two table spoons of organic pork lard wok is to be stirred continuously for next steps until cooked add pork fillets to wok, fry for 1 min add onions, fry for 1 min add vegetable in order of length of cooking (~zucchini before bok choy) add splash of cooking wine add sesame oil pinch of chinese 5 spice (to taste) add oyster sauce (enough to light coat dont overdo) Cooking should be over in about 5 minutes See more

Matt goes searching for the best pork to cook on a spit. This takes him to a little place called Macclesfield where he meets Christine Ross whos producing the rare Large Black Pig so rare, her farm is considered a conservation area by the UN. 19.01.2022 we don't normally delve into politics however this is one of the most important trade agreements which Australia could ever sign and it is no benefit to Australia. Please care about the future and research the TPP trade agreement documentary. It is better to know what is really going down here then to remain ignorant (which is what our Abbott government want and will achieve if this agreement is signed). We should be more concerned about what this TPP agreement means for Australians. Please share and make it a decision for all Australians.

We are still farming organically in every way and have just received our full organic certification with ACO. Look out for Mary Valley Organic pork at the Charming Squire in Brisbane Southbank tonight, juicy organic pork roast - what more could you want!

17.01.2022 Clancyjames are selling our pork in Brisbane. The owners David and Andrea visited our farm a few weeks back. It was a delight to have them visit, enjoy lunch and take the walk in the rain to see our pigs being happy as. Lunch menu consisted of James special roast pork collar & home grown salad with James popular Asian dressing. 08.01.2022 April already! MVFR has been quietly busy - now with the latest pig paddocks built the pigs have so much extra space to play in grassy, tree filled paddocks. They have even more space and so many more hiding places with trees and bushes to sleep under. Hide and seek is one of the new games - "come out, come out, where ever you are".... slowly they arise from their little hiding places for a scratch.
