29.01.2022 Flu Fighting Chicken and Vegetable Soup INGREDIENTS MAKES 6 SERVES 1 tablespoon olive oil 1 onion, finely chopped... 1 leek (360g), thinly sliced, rinsed, drained 2 carrots, peeled, halved lengthways, thinly sliced 2 stalks celery, thinly sliced 1 tablespoon finely grated fresh ginger 1 large clove garlic, crushed 1 teaspoon Pure Food Essentials ground turmeric* cup pearl couscous or long grain rice 8 teaspoons of Best of the Bone Broth (Original or Turmeric, ginger and black pepper)* OR 2 chicken stock cubes (10g each), crumbled 500g chicken breast fillets, trimmed 2 L (8 cups) boiling water 1/3 cup chopped fresh parsley 2 tablespoons lemon juice METHOD 1. Heat oil in a stockpot over a medium heat. Add onion and leek. Cook, stirring occasionally, for about 6 minutes or until soft. 2. Add carrots, celery, ginger, garlic and turmeric. Cook, stirring, for a further 2 minutes. Stir in couscous or rice. 3. Add stock cubes/best of the bone broth concentrate, 2 litres (8 cups) boiling water and chicken. Bring to boil. Cover with lid. Gently boil for 15 minutes. Remove pot from heat. 4. Using tongs, remove chicken. Cool slightly. Coarsely shred. 5. Return chicken to pot. Simmer, stirring, for about 2 to 3 minutes, or until chicken is hot. Stir in parsley and juice. Remove from heat. Season with salt and pepper. Serve. TIP! Soup can be made up two days ahead. This recipe is perfect for any kids who are wanting to get in the kitchen and explore their culinary talent with very simple ingredients, and a very simple method. Chocolate bark makes a great last-minute dessert idea - and can also be packaged up for a cute little teacher's gift for the end of the year! ... For this recipe you will need: - 350gr of dark chocolate chips - 4 tbs mixture of nuts & seeds (almonds, pepitas and walnuts make a great combo, dry fruit also works well!) To make: 1. Line a baking tray with some baking paper. 2. Melt choc chips in a heat-proof bowl set over a saucepan of gently simmering water. 3. Once melted, spread melted chocolate over your baking sheet at around half a cm thickness. 4. Sprinkle over your choice of nuts and dry fruit. 5. Gently use the palm of your hand to push in the nuts and dried fruit into the bark Allow to cool over 2-4 hrs at room temp, or alternatively, place in freezer for 15 mins, break apart and enjoy!
