Osare will be slinging cocktails at Hobart Twilight Market at Brooke Street Pier on Friday night and will be offering tastings and sales for the first time at the Cascade Community Market at Cascade Brewery Co on Sunday. Saturday is our day off and we'll be dressed up for the Taroona Rugby Club Annual Ball at the Port Cygnet Cannery

I'll have a couple of new things The last of the tasting packs plus the opportunity to taste and pre-purchase our Finocchietto (fennel liqueur made with @siroccosouth) which will be ready for delivery before the end of the month. 15.01.2022 I'll be out and about this Father's Day weekend! Firstly at @brookestreetpier for the @hobarttwilightmarket, so excited to be back at this one. Come along for drinks, food and heaps of design stalls. Great options for a last minute gift for Dad. Then on Saturday I'll be back at the friendliest market in Tassie - @banjosnewnorfolkmarket. Why not jump on one of the double decker busses heading out to the Derwent Valley for the day!

13.01.2022 Gentian One of the key botanicals in Osare Tasmanian Amaro, Gentian root has an earthy herbaceous bitterness. It's one of the first botanicals into the maceration and it is a base flavour borrowed from European traditions.

13.01.2022 Just in time for Mother's Day, I'm stoked to release Osare's collaboration with @siroccosouth - wild fennel liqueur or liquore di Finocchietto. Mic has foraged wild fennel flowers and seeds and I've used a combination of dried, fresh and toasted to achieve a depth of aniseed flavour. It's the perfect timing really, my mum's go to Digestivo is sambucca, but I'm thinking she may be switching . Use code MAMMA for free shipping this week, in time for Mother's Day next Sunday.

12.01.2022 A word on filtration... These two pictures are of 'the tincture', it's the result of the lemon peel macerating (or steeping) in pure alcohol. The alcohol takes on the colour, flavour and aroma of the fresh lemons. Some of the particulate matter makes the tincture cloudy. At this point we choose to filter the liquid - if these small particles remain in the liquid they can bitter the limoncello. *Before on the left and after on the right*... While the 'after' picture shows the filtered tincture to be quite clear, when this is mixed with the sugar and water to make the final limoncello something interesting happens... The natural lemon oil which remains in the tincture reacts with the water (think ouzo effect) and again makes the liquid cloudy. We choose not to filter heavily at this stage, as the lemon oil is what gives so much complexity to the flavour and nose of the limoncello.
