23.01.2022 Fathers Day is just around the corner, so weve got the perfect recipe for a classic pork roast with crispy crackling by Justine Schofield that dad is sure to love. Find the recipe below: Serves: 4-6 Time: 5 hours plus overnight air-drying... Ingredients: 1 x 2-2.5kg Otway Pork shoulder, skin on and scored 1 heaped teaspoon fennel seeds 1 tbsp. olive oil 1 large onion, sliced 1 fennel bulb, sliced 1 carrot, cut into 4 1 garlic bulb, unpeeled, cut in half horizontally 2 bay leaves and a handful of thyme 1 cup white wine or apple cider 1L chicken stock 2 Granny Smith apples, pierced Salt Method: 1 Remove pork from plastic and pat dry with paper towel and air-dry in fridge overnight to dry out skin. Take the pork out of the fridge at least 1 hour before cooking to allow it to come to room temperature and preheat the oven to 220C. 2 Massage oil all over meat and generously salt, particularly on skin. Turn the pork over and rub fennel seeds into flesh. 3 Place the vegetables, garlic and herbs in the centre of a large, deep roasting tin. Place the pork, skin-side up, on top and tuck most of the vegetables underneath. Roast in the oven for 2030 minutes or until the skin is blistered, golden and crunchy. 4 Remove from the oven and reduce the oven temperature to 160C. 5 Pour cider or wine around the pork then add the stock, ensuring it does not touch the skin. The aim is to have enough liquid to cover most of the flesh. If you need a little more liquid, adding water is fine. Return the pork to the oven for 2 -3 hours. 6 Add the apples to the liquid and cook for another 25 minutes, until the pork pulls apart easily and the apples are soft. 7 Rest for at least 20 minutes then remove the crackling from the pork. Break the crackling into shards. Pull the meat apart and place on a large platter with the crackling and apples. Pour the pork pan juices and vegetables into a bowl and serve on the side. 20.01.2022 Keep your pork exciting by changing up the sauces you accompany it with. Try our simple recipe below for Pan-fried Pork Cutlets with Fennel and a Creamy White Wine Sauce. Recipe below Ingredients (serves 2): 1 tbsp. extra virgin olive oil 1 tbsp. unsalted butter... 2 Otway pork cutlets (about 200g each and 2cm thick) Sea salt Freshly ground pepper 1 small fennel bulb, cut into wedges, reserving fronds cup (125ml) white wine or apple cider 1/3 cup sour cream Method: 1 Heat the oil and butter in a medium frying pan over a medium-high heat until the oil begins to sizzle. Add the cutlets and cook for about 3 minutes until golden brown underneath. Season top of the cutlets with salt and pepper and turn them over. Add the fennel wedges and cook for 1 minute each side until golden around edges. The pork should be golden on the underside at this point. 2 Pour in the wine or cider. Bring to the boil, cover pan with lid, reduce heat and simmer for 6 minutes. Then, leaving the frying pan on heat, transfer the cutlets and fennel to warmed plates. Stir cream into the pan juices, scraping up any bits stuck to the base. When it just comes to a boil, tip the creamy sauce over the cutlets and fennel. Scatter the reserved fennel fronds to garnish. TIP: This dish can be prepared a day ahead, allowing the flavours to intensify. See the recipe below: Ingredients (serves 4): 1 tablespoon vegetable oil 4 garlic cloves, thinly sliced... 1 long red chilli, thinly sliced cup honey 2 tablespoons soy sauce 1 teaspoon five spice 3 star anise 500g Otway pork belly strips, cut into 4cm pieces Method: 1 Heat the oil in a medium saucepan over a medium heat. Add the garlic and chilli and cook for 1 minute until light golden. Add the honey, soy sauce and five spice, stir to combine. Add the pork, stir to coat well. Add 600ml water and bring to the boil, skimming any rising scum from the surface. Cover, reduce the heat to a low simmer and cook for 1 to 2 hours, or until the meat is very tender. Remove the pork from the braising liquid and set aside, covered. 2 Simmer the braising liquid over a medium heat until it has reduced to a third, about 15- 20 minutes. Add the pork and heat through for 5 minutes. 3 Serve with steamed gan lai (Chinese broccoli) and steamed rice. 14.01.2022 Theres nothing quite like the crunchy saltiness of pork crackling We have the perfect recipe below for roast pork belly with crackling, matched with an apple and watercress salad. See the recipe below Ingredients (serves 6-8): 1kg Otway pork belly, boneless 60g salt... Rub mix: 2 tablespoons sea salt 2 teaspoons fennel seeds Salad: Zest and juice of half lemon 2 tablespoons extra virgin olive oil 1 Granny Smith apple, cut into fine strips 1 bunch watercress bunch coriander, leaves picked Method: 1 To make the brine, place the salt and 3 litres of water in a large saucepan, stirring until salt dissolves. Cool to room temperature, then transfer to a 4 litre plastic container (large enough to hold the pork belly) and place in the fridge to chill. 2 Immerse the pork belly in the chilled brine to cover completely. Seal the container and place in the fridge for 24 hours. An hour before roasting, remove the pork belly, discarding the brine. Pat dry all over with paper towel. Using a mortar and pestle or small food processor, pound or grind the salt and fennel seeds until the seeds are coarsely ground. 3 Preheat the oven to 220C (200C fan-forced). Score the pork at 5mm intervals using a sharp knife. Rub the salt mixture over the skin and into the cuts. Place the belly skin side up on a rack in a roasting tray. 4 Roast for 15 minutes, then reduce oven to 190C (170C fan-forced) and continue to roast for 40 minutes, until skin crackles and meat is just cooked through, the juices will run clear when a skewer is inserted. Rest for 15 minutes in a warm place. 5 Meanwhile prepare the salad. Place lemon zest, juice and oil in a screw-top jar and shake to mix well. Season to taste. Combine the apple, watercress and coriander in a serving bowl and pour over the dressing. 6 Carve the pork belly into 1cm wide slices and serve with the salad. 08.01.2022 With spring just around the corner (can you believe it?), fresh, light salads make for the perfect meal. Try this Vietnamese Pork Cutlet Salad by @justineschofield using our pork cutlets. Recipe below and on our website Ingredients (serves 4): 1 tbsp. peanut oil 100g dried glass noodles, rehydrated... 1 handful each of Thai basil, mint and coriander 1/2 carrot julienned 1/2 red onion, finely sliced 1 handful of bean sprouts 4 Otway pork cutlets Marinade: 1 piece of lemongrass, finely minced 1 clove garlic, minced 1 x 2cm piece of ginger 1 tbsp. kecup manis Nuoc mam: 2 tbsp. fish sauce Juice of 1 lime 2 tbsp. caster sugar 1 small red chilli, finely chopped Method: 1 Prepare rice noodles as per packet instructions, then drain. 2 Prepare the marinade and massage into pork cutlets. Marinade for 30 minutes. 3 For the nuoc mam dressing combine all ingredients and put to the side. 4 Heat oil in a pan and cook pork cutlets for 3-4 minutes on each side or until cooked through. 5 To assemble, portion drained noodles between bowls and top with sliced pork cutlet, carrots, herbs and sliced onion, bean sprouts and then the nuoc mam.

To the lucky ones who got to experience it in-person, we hope you had fun and learnt some new pork skills. To those who joined us online via our livestream, we hope you enjoyed it too. We sure did! Another thank you must go to our friends at Gewrzhaus who provided our guests with jars of their Crunchy Pork Crackling Rub to experiment with at home and Stanton & Killeen Wines who provided the wine that complemented our Asian-inspired pork dishes perfectly. See the recipe below Again, let us know if you cook it at home and tag us in your pics using @otway.pork #otwaypork Ingredients (makes 6 bao buns): Vegetable oil, for shallow frying 6 pork cutlets, flattened lightly with meat mallet... 2 free-range eggs, lightly beaten 1 cup plain flour 2 cups panko breadcrumbs 2 tbsp white sesame seeds 6 frozen bao buns 4 spring onions, white and light green part finely chopped and dark tops reserved finely sliced 1/3 of telegraph cucumber, thinly sliced into rounds Bull Dog Tonkatsu sauce, to serve Salt Method: 1 Place the pork chop between 2 pieces of baking paper and flatten with a meat mallet. 2 Place the eggs in a shallow bowl and the flour in a separate shallow bowl. Season flour with salt. Combine panko crumbs with the sesame seeds on a plate. Dip each piece of pork in to the flour to coat, then egg and then finally the crumb mixture, pressing firmly to ensure crumbs stick. 3 In a large non-stick frying pan heat oil over a medium heat. Fry pork katsu for 2 minutes on each side or until golden brown and cooked through. Drain on a rack to ensure pork stays crisp then slice on an angle. 4 Steam the bao buns in a steamer basket for 8-10 minutes. 5 To serve, tear open the buns and add a little tonkatsu sauce to each side of bun. Portion the pork slices into each bun then add spring onions and cucumber and gentle press to sandwich.

02.01.2022 If you missed Justine Schofields Winter Pork Masterclass livestream on Wednesday night, do not worry. Weve got her recipes right here so you can recreate them in your own home. First up is Justines recipe for Pork Dumplings with Peanut and Chilli Sauce. Let us know if you make it and be sure to tag us in your photos! See the recipe below Ingredients (makes 40 dumplings): 350g Otway pork scotch (neck), cut into 3 cm cubes 1 1/2 teaspoons cornflour mixed with 1 tbsp.... of water 4 spring onions, white part finely chopped, pale green part julienned to serve 1 x 3 cm piece of ginger, finely chopped 1 egg, whisked 3 tbsp. soy sauce 40 Shanghai wonton skins (wrappers) Peanut sauce: 3 tbsp. smooth peanut butter 120ml cold water 1 tbsp. black vinegar 1 tbsp. sesame oil 1 clove garlic, minced To serve: 1 tsp. Sichuan pepper, toasted and crushed Chilli oil, to taste Method: 1 Freeze the pork pieces for 30 minutes. Working in small batches pulse the meat in the food processor. Place the finely chopped spring onion into the processor with the pork, the cornflour paste, ginger, egg and 1 1/2 tablespoons of soy. Briefly pulse to combine. 2 Line a tray with baking paper. 3 Place a wonton wrapper on a clean work surface and add 1 teaspoon of the pork mixture. Brush the edges with a little water. Bring the opposite corners together and press to seal. Now lightly press around the filling to release any air bubbles and form a triangle parcel. Wrap the triangle around your thumb, bringing two of the three corners together. Brush one corner with a little water and press to stick together. Place on the tray and cover with a damp cloth to ensure they do not dry out. Repeat this process with the remaining wrappers and mince mixture. 4 Bring a large pot of water to a gentle boil. 5 To make the peanut sauce, whisk all of the ingredients together. 6 Cook the dumplings in two batches for 3-4 minutes or until they begin to come to the surface. Drain and place in serving bowls. Drizzle with a generous amount of peanut sauce and small drizzle of chilli (or a little more if you like it extra hot). Sprinkle over Sichuan pepper and garnish with the remaining spring onion and cucumber.
