25.01.2022 While searching for recipes ideas for zucchini - yes, we have tons of zucchinis at the moment - I found a carrot and zucchini loaf that looked pretty good - and low in sugar! After a bit of experimenting, have honed it to delicious perfection. Original recipe posted below in comments (with instructions). My modified ingredient list, as follows: 3 cups wholemeal spelt flour 1 tablespoon baking powder 1 teaspoon baking soda ... teaspoon salt 1 teaspoon ground cinnamon 1/2 tsp ground nutmeg 1/2 tsp ground allspice 2 eggs, lightly beaten 1 cup almond milk 2 tablespoon butter, melted cup packed brown sugar 1 cup shredded zucchini 1 cup shredded carrot 3/4 cup chopped walnuts 1/2 cup sultanas See more

12.01.2022 Well here is our new green house. Finally paid for and built. Thank you to everybody who has been eating their vegetables, all the locals, people at the markets and Jo’s Pantry, together we have built a green house! This will allow us to extend the seasons and grow throughout the winter. Very exciting.

01.01.2022 Tis the season for preserving and pickling! Found this recipe for pickled beets that turned out great so I thought Id share. My modifications: I boiled the beets instead of roasting them, used about half the sugar and didnt have white wine vinegar on hand so used red wine vinegar.
