22.01.2022 ST BRENDANS COLLEGE - CATTLE CLUB Today Our Capricorn Coast got up close to some magnificent steers, inside the cattle yards at St Brendan's College (SBC). The yards built about 30 years ago have been renewed by the students and were a perfect setting to chat to Bill Oram, Agricultural Science Teacher at SBC. Bill is very proud of the steers he stands amongst, and speaks very highly of the achievements and hard work that the college students put into them. The SBC Catt...le Club is a co. curricular activity offered to all SBC students and students from St Ursulas, from grades 7-12. The club provides students with an alternative to your mainstream activities and offers students two 1-1.5hr sessions a week, giving them experience with working up close and personal with the cattle. Extra sessions are run before school as events draw closer and more preparation is needed. The main event that SBC Cattle Club are aiming for at the moment is Beef Australia 2021. The club offers many opportunities for the students on how to prepare cattle for showing. They learn how to show, feed, groom, lead, educate and train the animals. A high percentage of the cattle at St Brendans are born and bred at the college, giving another invaluable experience to the students. Added to the fantastic activities that the students get to try at Cattle Club, is the college Rodeo Club. Also run by Bill, the rodeo club has many students that cross over between the two clubs. The students gain experience in bull riding, going to rodeos, and the club facilitates an introduction into the sport. Rodeo Club provides and coordinates a school for students interested in practicing for this sport, but also assists them in attending rodeos. Next weekend Bill and his Rodeo Club members will be assisting in the back yards at the Mount Morgan Rodeo, and pre COVID they help out at events such as the Yeppoon Show. At St Brendans, Agricultural Science is taught to all boys in grades 8-10, with an opportunity to study a Certificate 2 in Rural Operations in grades 11 and 12. Thank you to Bill at SBC for providing us with this insight into the wonderful experiences that the Cattle Club for St Brendans and St Urulsas provides, I think it is safe to say, as you can see from the images, the students are doing a fantastic job, and what an excellent opportunity for them all.

04.01.2022 The Waterline Restaurant - Sushi Chef Jerry Behind the scenes at The Waterline Restaurant you will find Jerry, the Sushi Chef extraordinaire, his creativity and use of ingredients is an art form and we were lucky enough to watch him work his magic. Jerry is from Cebu in the Philippines, and he says that his passion, hardwork and dedication is how he started his pathway to becoming a chef. Jerry started his career in Dubai,, and has always had an interest in the culinary ...World, his love for eating sushi driving him to become a sushi chef. He started as wait staff in the hotel industry and an opportunity to do kitchen training led him to specialise in Japanese cuisine. Over the past 15 years, Jerry has worked and gained experience in Japanese restaurants such as Okku and Morimoto, and the chance of meeting the legendary Iron Chef Masaharu Morimoto was described by Jerry as 'superb and awesome!' Chef Jerry says that the final touches, plating and presentation are his favourite parts and as you can see from the gallery, he is a true perfectionist and artist in his field. Chef Jerry has been with The Waterline Restaurant for 19 months and says it is fantastic to be part of their team. Using beautiful fresh local ingredients combined with ingredients from around the World, Chef Jerry creates delicious and taste tingling dishes.
