25.01.2022 Ottolenghi's cookbooks were sorely missed in the caravan so I made certain to find the right packing box over the weekend. I didn't have everything for two diff...erent recipes so I combined them. Preheat oven to 220c. Take 6 long eggplants and cut them lengthways. Scatter with salt, EVOO and place in an ovenproof dish Flat side down for 30 mins. Stuffing Prepare 1 cup of black barley and barley according to the instructions on the packet. (1 cup - 3 cups water - boil for 25-3mins). While the barley cooks and over a medium heat sauté one finely diced red onion, 3 finely diced garlic cloves, 2 teaspoons of cumin seeds and 5 (shelled cardamom pods. Stir for 4 mins. Add a finely diced red capsicum. Once the barley is cooked add 3/4 to the onion mixture and continue to fry over the medium heat for a few minutes until the barley grains are separated and most moisture has evaporated. Once the eggplants have cooked and cooled use a teaspoon to scoop out the flesh taking care to keep the skin intact. Reduce the oven temperature to 190c. Add the flesh to the stuffing and mix thoroughly. Add a finely diced quarter of a preserved lemon to the stuffing. Scoop the stuffing into the eggplant skins and cover the trays with al foil. Bake for a further thirty minutes. Garnish with fresh herbs - mint, basil, parsley. I wished I'd had a pomegranate to serve over the eggplants too! Serve with honey carrots or any other veg! I think I have my kitchen mojo back!

08.01.2022 #firstday #lastday of our trip. It's been a huge year which comes to its end when we pull up tomorrow. It wasn't without nervous anticipation that we left our driveway on 10 January. This time we'll be pulling in to our new family property. We'll miss aspects of our holiday - the excitement of exploring somewhere new and being together.
