Australian feta and with @judemayall beautiful #mardanggichspicemix that has a delicious hint of #kakadu plum. A few confit of baby tomatoes , charred scallions with the help of Fingerlime olive oil the ochre was pan fried, this was a creation for a vegetarian Masterclass participant that Chef Sebastian took at the Foodhall Cookery Studio

10.01.2022 Louise Slice with Davidson Plum Jam. There are so many great recipes that have stood the test of time and I dont know any country kitchen, or even city kitchen for that matter, that hasnt made this slice. Originally it was the Louise Cake, which was created for Queens Victorias daughter, Princess Louise, for her wedding day, its since become a slice and perhaps our early pioneering women took it upon themselves to create a little masterpiece from this original idea. The recipe has stayed basically the same, you can find it on www.outbackchef.com.au and Ive added some Davidson Plum jam which I feel the tartness of the jam really works with the charm of this great slice.
