19.01.2022 Although we're all about outdoor cooking, at the moment it doesn't seem right to be encouraging any sort of outdoor excursions. If you're lucky enough to have a well ventilated back yard our outdoor area at your home then here is a great method to try out to keep that outdoor cooking magic alive during these uncertain times. By using the camp oven and heat beads as the heat source, you can create a small but intense heating surface in combination with a cast iron pan. We ar...e all doing our part to isolate and social distance ourselves, so please be mindful that we are not encouraging you to go outside of your home to cook. In fact, this demonstration was done on the front deck of my house. One tip - if you do use this camp oven technique, make sure you allow enough air for the heat beads to continue to burn. Some pans will create a tight seal with your camp oven and thus extinguish the beads. Ideally, you can prop the pan over the pot using a small grill, but if not, just make sure you have a crack between the pan and pot or that you're periodically lifting the pan out of the pot allowing the air to make its way back in. 15.01.2022 Have you ever used a camp oven (aka Dutch Oven) for cooking outdoors? With the placement of coles or charcoal on the bottom and top you can regulate the inside temperature and basically cook anything you would with a normal oven. A slow-cooked lamb shoulder, or a hearty stew, even fresh bread is achievable with one of these simple cooking tools. #outsidethekitchen #discoverportmacquarie

13.01.2022 There's no need for variations of this traditional recipe. It's simple and delicious. Lest we forget this ANZAC Day . INGREDIENTS 1 cup rolled oats 1 cup plain flour... 2/3 cup brown sugar 2/3 cup desiccated coconut 125g butter 2 tbs golden syrup 1/2 tsp bicarbonate of soda METHOD Preheat oven to 160 degrees Celsius (fan-forced). Grease and line three flat baking trays with baking paper. Combine the rolled oats, flour, brown sugar and coconut in a bowl. Place butter, golden syrup and 2 tablespoons cold water into a microwave-safe bowl and heat for 3 minutes, 50% power or until melted. Stir through the bicarbonate of soda. Pour the butter mixture over the oat mixture and stir to combine. Roll level tablespoons of mixture into balls. Place on trays, 5cm apart and flatten slightly. For chewy ANZACS, bake for 10 to 12 minutes or until lightly golden. For crunchy ANZACS, increase cooking time to 12-15 minutes. Leave on the baking trays for 5 minutes before transferring to a wire rack to cool completely. . #insidethekitchen #anzacday #quickrecipes

08.01.2022 Although we're all about outdoor cooking, at the moment it doesn't seem appropriate to be encouraging anything that has you leaving your home. If you are lucky enough to have a well ventilated outdoor area or backyard at your home then perhaps this technique of using a camp oven and heat beads as your heat source will be helpful for keeping the outdoor cooking feel alive. In fact, this demonstration was done on the front deck of my house on a wooden table. Using the camp ov...en as the actual heat source rather than the cooking receptacle helps to keep the heat small and contained. Make sure you use a cutting board or another heat barrier between the camp oven and your table. One tip - if you do use this camp oven with cast iron pan technique, make sure you allow enough air for the heat beads to continue to burn.
