Stocks are limited, so first in best dressed. The garfish fishery is now closed for the next 6 or so weeks. We have however put away frozen packs but again these are limited. Our oysters this week come from Jet Oysters Smoky Bay. Another great farm doing what it tak...es to produce great oysters. Our regular farm Gazander is offline for a week doing some work on their oyster lease. Over our break, we have taken the time to organise Christmas order forms as they have been highly requested and we will have them available as of this weekend. ... We have a large variety of fish this week and have managed to get out hands on many favourites. Coorong mullet volumes have seen an increase in the market but pricing has not come back just yet. Coming into the crayfish season we tried our best to get our hands on some fresh, cooked stock as there was a dip in price but unfortunately missed out and prices jumped back up. After a short break from Gazander Oysters they’re also back. We have opted for two different sizes this week as we know not everyone loves large oysters and large oyster supply is limited at this time in the season. After talking with many farmers, we are all in agreement that spawning season is going to be an early one this year. For all that are after closed oysters to pop in their freezers for Christmas, we recommend doing so within the next week ir 2. The pellicle is the skin that forms while drying to help keep the moisture in what you are smoking. 15.01.2022 Spaghetti alle Vongole anyone? Ingredients: -750g vongole -1 small a bunch of flat leaf parsley -4 garlic cloves ... -10 cherry tomatoes -250mL dry white wine -400g spaghetti -Sea salt -Freshly ground black pepper -Extra virgin olive oil -1-2 dried chilies -Crusty bread to serve Step 1: Cook the pasta in a large saucepan of lightly salted boiling water according to packet instructions, or until al dente. Step 2: Finely chop parsley stalks, and put them to one side and roughly chop the leaves. Peel and chop the garlic, quarter cherry tomatoes and get the wine ready. Step 3: About 5 minutes before the pasta is ready, put 4 generous lugs if olive oil into a hot pan and add garlic, parsley stalks, and a good pinch of Salt and pepper. Crumble the dried chilli and the chopped tomatoes. Stir constantly and just as the garlic starts to colour, add the vongole and pour in the wine, stir and place a lid on the pan. After 3-4 minutes the vongole will start to open, keep shuffling the pan around until they all have opened. (Note: not all vongole will open but if no bad aroma is present they are fine to consume) Step 4: Drain and add pasta to the pan of vongole song with the parsley leaves and an extra drizzle if olive oil. We have kept a range of Weber/BBQ size whole snapper, nannygai, swallowtail and tarakihi for those who are planning on making the most of the sunny weather. ... Coorong mullet was not available in quantity and was of poor quality as the ongoing issues with seals in the Coorong is limiting saleable fish which has left us without.
