15.01.2022 Large Fermentation Tank, CO2 Blowoff Valve.

13.01.2022 What is {alcohol_drink} made from? I get asked this question a lot, and there is a lot of confusion as well. With the renaissance of craft and boutique distilleries, a lot of traditional recipes and feed stocks have been augmented with creative alternatives. The old benchmark that Vodka must be made from Barley, or potatoes is fading. World class Vodka’s are being made from wine grapes, cane sugar, beet sugar, and milk whey (lactose).... What is generally agreed, and enforced globally is that any potable (meaning for human consumption) alcoholic drink, must be made from feedstocks from an agricultural origin. Ethanol the primary active ingredient in distilled spirits, can be made from industrial sources (i.e natural gas), and is commonly made this way for industrial uses. This method is illegal for anything bound for our consumption. So to the list; Vodka Vodka is traditionally made from potatoes or fermented cereal grains. Some brands also make it from other substances like fruit, wine grapes, sorghum or various cane and beet sugars. Whiskey Whiskey is type of distilled alcoholic beverage, generally made from fermented grain mash including barley, corn, rye, and wheat. The distinctive taste of the drink is achieved after it is distilled, and then fermented in charred oak wood barrels. Most countries do not allow the sale of un-aged or raw whisky (ie Moonshine or Flash), for a multitude of historical reasons. Brandy Although brandy can be made from any fruit but in order to achieve higher acidity it is traditionally made from early grapes. Like whiskey, brandy is aged in wooden barrels and may have caramel colouring added. Cognac Technically a type of brandy but cognac deserves a special mention because this particular drink can only be made if certain requirements are met. Cognac can only be made in the Cognac Region in France, while strictly adhering to the Government Controls. Cognac is commonly made from Ugni Blanc grapes, distilled twice in copper pot stills and should be aged at at least two years in French oak barrels from the French districts of Limousin and Tronçais. Rum One of the most loved and oldest distilled alcoholic drinks, rum is actually made by fermenting the by-products of the sugar industry (molasses) or the unprocessed sugarcane juice itself, then distilling. The raw spirit is then aged in barrels. Gin Based on a neutral spirit like to vodka, gin gets its name and principal flavour from Juniper berries. Other ‘Botanicals’ used for flavouring include coriander, citrus peel, cinnamon, almond and liquorice, but there is effectively no limit. All the flavourings in the gin should be natural.
