19.01.2022 A fact you didnt know two minutes ago that youre about to learn now: the Fazenda California coffee cherries undergo a totally unique processing method, unlike anywhere else in the world! An exception to the rule that most specialty coffees are grown on the Coffee Belt (along the equator at a high altitude of 1000m+), Fazenda California is already unique. But its the Cold Soul Process that really sets this espresso single out from the crowd. Producer Luiz Saldanha (w...ho operates the farm with his partner, Flavia) dreamt up the idea of Cold Soul Processing on a trip to Honduras. While visiting a wet mill, Luiz learned from the manager that the mill frequently suffered power outages, meaning equipment could become inactive for up to 12 hours at a time. To prevent the fruits from wasting, the manager soaked the cherries in cold water overnight until the power came back on, then would pulp and wash the cherries like a normal washed process in the morning. Thus: the idea for Cold Soul Processing was born. Heres how it works: After the ripest cherries are harvested and brought to the wet mill, they are placed in washing tanks and floaters are separated out. The remaining cherries are then soaked in cold water (10-12C) overnight, slowing the initial fermentation to allow Luiz to begin his own controlled fermentations. Slow fermentation increases lactic acidosis in the seed, which creates the creamy body and lactic quality in the cup. Once the initial wet fermentation is completed, the cherries are removed and placed on raised beds to dry in the sun for up to 40 days. A long drying period also provides excellent stability in the seed, increasing uniformity in roasting & longevity of the green.
