We’ve got you covered with a recipe for some delicious carrot cake Ingredients: FOR CARROT CAKE... 2 cups (250 grams) all-purpose flour 2 teaspoons baking soda 1/2 teaspoon fine sea salt 1 1/2 teaspoons ground cinnamon 1 1/4 cups (295 ml) canola or other vegetable oil 1 cup (200 grams) granulated sugar 1 cup (200 grams) lightly packed brown sugar 1 teaspoon vanilla extract 4 large eggs 3 cups (300 grams) grated peeled carrots (5 to 6 medium @pacificfruitandveg carrots) 1 cup (100 grams) coarsely chopped pecans 1/2 cup (65 grams) raisins FOR CREAMY FROSTING 8 ounces (225 grams) cream cheese, at room temperature 1 1/4 cups (140 grams) powdered sugar 1/3 cup (80 ml) heavy whipping cream 1/2 cup (50 grams) coarsely chopped pecans, for topping cake Method: 1) Heat the oven to 180 degrees Celsius 2) Grease two 9-inch round cake pans and line the bottom with baking paper then grease the top of the paper. Or, grease and flour the bottom and sides of both pans. 3) In a medium bowl, whisk flour, baking soda, salt, and the cinnamon until well blended. In a separate bowl, whisk the oil, sugars, and vanilla. Whisk in eggs, one at a time, until combined. 4)Switch to a large rubber spatula. Scrape the sides and bottom of the bowl then add the dry ingredients in 3 parts, gently stirring until they disappear and the batter is smooth. Stir in the carrots, nuts, and raisins. 5)Divide the batter between the prepared cake pans. Bake until the tops of the cake layers are springy when touched and when a toothpick inserted into the center of the cake comes out clean, 35 to 45 minutes. 6)Cool cakes in pans for 15 minutes then turn out onto cooling racks, peel off parchment paper and cool completely. (If you find that a cake layer is stuck to the bottom of the pan, leave the cake pan upside down and allow gravity to do its thing). 7)In a large bowl, beat cream cheese with a handheld mixer on medium speed until creamy, about 1 minute. Beat in the powdered sugar, a 1/4 cup at a time until fluffy. Pour in cream and beat on medium speed for 1 minute. Chill covered until ready to frost cake. 8)Once the cake has cooled, add frosting and scatter nuts as desired

We have been supplying Sizzler for the past 28 years and during that time have had a wonderful business and personal relationship with the great people at Collins Foods. Sizzler is where children learnt how to dine out in Australia, and our kids loved it when we called out we’re going to Sizzler. 06.01.2022 We’re loving the pomegranates from our last post, so here’s a yummy recipe you can make using them! INGREDIENTS 1 cup Pearl (Israeli) cous cous 180 grams Halloumi (around 6 ounces)... 1 Pomegranate 2 cups baby spinach 1 cup candied pecans 1/2 cup mint leaves Salad Dressing: 1 lemon juiced 1/4 cup olive oil 2 tbsp apple cider vinegar METHOD: 1. Heat a tablespoon of oil in a saucepan. Add the couscous and toast for about 2 minutes. Add two cups of boiling water, reduce to a simmer, cover and cook for 10-12 minutes or until cooked through. When cooked, drain and rinse the couscous and place into a serving dish to cool. 2. Slice the halloumi. Add a splash of oil to the saucepan and once hot cook for about 3 minutes on each side, until lightly golden, set aside. 3. Chop the pomegranate in half and remove the seeds by firmly hitting the outside with a wooden spoon or a spatula while holding the pomegranate over a bowl. Squeeze gently to help release the arils. 4. Roughly chop the candied pecans and the mint. 5. Combine the cous cous with the halloumi, pomegranate seeds, baby spinach, candied pecans and mint and toss gently. 6. Mix together the lemon juice, olive oil and apple cider vinegar and drizzle over the salad to serve. @ Gold Coast, Queensland
