24.01.2022 Out at Muckatah to do a couple of fully grown Wagyu. On the hook dressed weights were 340kg other was 440kg.



23.01.2022 Another Murray Grey today out at Cooma. Should go around 250kg on the hook at a rough estimate.

23.01.2022 Big grain fed 2 1/2 yo Wagyu at Louises’s place in Katandra today. 420kg dressed weight. A Big boy!

19.01.2022 With our first time butchering our own beasts. Ash walked us through the process and made it very pleasant experience. My son is 16 and has expressed an interest in being a butcher. Ash was happy to explain the total process and allow his help to package up the meat

I love it when I meet farmers that are passionate about the paddock to plate experience, and that share their own passion of produce with me. Today I have been graced with cheeses, Salami, olive oil and some nice chorizo. #paddocktoplate

11.01.2022 Ash's tip for freezing meat "put a layer of cardboard between the meat packs when freezing so the packs don't stick together". For chest freezers the box from a Carlton Dry stubbies works well.

09.01.2022 A couple of Murray Greys todays at Mead. Where is Mead you say? somewhere near Cohuna. 300kg plus dressed. They are just getting bigger and bigger this time of year.

09.01.2022 A week ago we put out one of the Angus we bred last year in the Coolroom. Dressed out at 220kg on the hook (14 months old). We Processed it today for Peter. Who with the help of his daughter Lara did a great job on helping us mince, pack it and label it ready for their freezer. We have Angus steers ready to sell if your interested in buying a beast of good quality meat, we can process it for you, at a reasonable price. 08.01.2022 A good news story in this time of covid .. One of the reasons I love my husband sooo much .... So here is how our weekend went. Had a cow give birth to a dead calf (placenta prévia). So thought we could try to get another calf to put on her. I talk my husband into helping me and god him he can’t refuse my request. Ash skins the dead calf and we put the skin on the new live calf. She took the calf on as her own !!! They are bonded . Happy wife happy life

08.01.2022 Back out to Rods’ at Cohuna today to process his big charolais. Loves tomahawk steaks on the coals and full osso to roast in his Webba. Then a big heiffer out at gunbower creek. Weight on the hook 300kg.

06.01.2022 Been a busy couple of months with farmers getting ready for the BBQ season now the weather is warming up. Back out to Undera today to cut up and pack the Wagyu and Angus, then to kill another Angus on the way home. Feeling like a couple of beers this arvo after a Cracking day. Cheers fellas

04.01.2022 Well it’s been a busy weekend as an essential butcher for farmers. Managed to put three in the coolrooms around the district with getting pulled up by the cops once for my tail lights flickering. The weekend that was well .. rather quite on the road. Happy Easter! 03.01.2022 Learning the ancient art of curing meat and creating the perfect homemade salami is one of the most prized Italian experiences. The whole process from meat selection, mincing, mixing, filling, curing and ultimately enjoying the end product is highly satisfying , rewarding and not to mention tasty. 03.01.2022 One of the best things I love about my job is .... when I get help from someone who is as passionate as I am, about the process of paddock to plate and at such a young age! She loves eating her own home grown beefies, and the whole process of how we do it ethically and respectfully of the cattle when it is time.

Ash walked us through the process and made it... a very pleasant experience. Ash was happy to explain the total process and us to help package up the meat. Growing our own animals has allowed us to ensure that the animals have had a great life, helping regenerate our farm and ensures that our meat is free from artificial hormones and chemicals.
