25.01.2022 Mangoe Pickle ( A Mothers Recipe) Traditionally known as KOSRACHE LONCHE in Konkani. Bringing Traditional Cooking To Life In The Simplest Possible Way.... Ingredients : 4 medium Raw Mangoes (About 2 to 3 cups) 2 tbsp of Chillie Powder 1 tsp Mustard Seeds (Roast) 1 tsp Jeera/Cumin Seeds (Roast with curry leaf) 1/4 tsp Methi/Fenugreek Seeds (Roast) 10-12 Black Peppercorns (Roast) 1 tsp Haldi/Turmeric Powder 1/4 tsp Hing/Asafoetida 1 - 1 cups Salt water, divided 1 Pod Garlic(Roast with jeera & curry leaves) 4 Sticks Curry leaves (Roast with Jeera) 150 ml mustard oil Method: Cut the mongoes into smal bits in cubes & marinate with 1 cup of salt water for 2 to 3 days refrigerated. Roast the ingredients individually in 50 ml mustard oil that are under Roast & mix all other ingredients together in a nixie except Garlic & curry leaves. Drain the Mangoes from the salt water & mix the freshly made mangoe Masala with 75 ml of mustard oil to the salted mangoes,add salt water as required of the remaining 1 cup Roast the garlic,jeera & curry leaves in 25 ml mustard oil & add to the pickled mango mixture . Rest the Mangoe pickle for a day preferably refrigerated. Bottle the pickle as required & serve with a good Indian or Asian Rice meal or eat with a Nan,Bread,Chapathi.

Magic Marination is simple PBLST ( Pepper Crushed,Salted Butter,Lime,Salt,Turmeric)... Marinate over night. Add stuffing of your choice on the last hour of baking ,Use bread toasted in butter with fried onions & ham,bacon,liver of your choice with a little sweetness of raisins . Serve Hot with Your Delicious Bread

Chili powder for the Red variation with Ginger Garlic Paste ,Coriander Powder,cumin seed powder,Garam masala powder.... Add potatoes or veg of your choice. Marinate for an hour ,then roast for 1 hour @ 200 Deg F with foil up & 45 Min @ 200 Deg F With foil up, then a 15 Min @ 250 Deg without foil. Flavors are amazing ,want it spicy serve from the Red side or non spicy serve from the Brown side.In between the spicy ness is mild. Enjoy.

10.01.2022 Salmon With Bok Choy. Simple,Easy No Drama Cooking. Fresh Bok Choy from the Garden & Freshly Caught Salmon.... Marinate the Salmon with Olive oil,Crushed pepper,Salt,Lime juice for at least 4 hours & Rest In the Fridge. Pan Fry the Salmon with Olive oil 2 minutes each side & lay them on the baking tray greased with olive oil. Cook the Bok Choy in the same pan ,place all the Bok Choy into the pan with some freshly crushed garlic . Bake with the baking tray sealed for 45 minutes @ a temperature of 200 Deg F. Serve Hot Salmon with Mashed Potatoes & Bok choy.

08.01.2022 Lamb Neck Stew Braised This rustic lamb braise in its own simplicity of the succulent braised lamb neck with plenty of crushed pepper, mild mint & tomato flavour, carrots or potatoes/sweet potatoes and a delicious slick of olive oil-laced fat is a revelation. This is one of those dishes that doesn't need embellishments, just some wilted greens, a leafy salad, or both, and plenty of good bread.... Method: Keep a side a kilo of sliced lamb neck,dust them with flour,salt & crushed pepper & fry them in a pan with olive oil until golden brown,keep them aside with its oil. In a dish add olive oil,add 1-1/2 Chopped onion,7 flakes of chopped garlic,2 teaspoons of crushed pepper,1 finely chopped tamato,a hand full of mint leaves ,lemon juice,salt to taste. Add the braised Lamb Neck pieces into the dish with either a mild chicken or meat stalk or water sufficient enough ,cook in a pressure cooker for 20 minutes ,then add your choice of potato,carrot or sweet potato & pressure cook for another 10 minutes. Serve Hot with bread .

05.01.2022 Chicken Curry Leaf Simple & Easy Ingredients:... 1 Kg Boneless 1/2 Cup curds. 1 Tbsp Ginger Garlic Paste. 1/2 Tsp cumin seed powder 1 Tsp Corriander Powder 1 Tsp Chillie Powder . 1/2 Onion 1/2 Tomato 3 Flakes of Garlic 1 Stick Curry leaves. 1 Tsp Salt ,then add to taste. Food color as required Red,Safron etc . Method: Slice the chicken to your choice & marinate with all ingredients except Onion,Garlic & curry leaves.refrigerate for 2 hours. Cook the marinated chicken for 20 minutes until done.reduce the sauce by keeping the lid open. Tamper with browned onions,garlic,curry leaves & add to the cooked chicken. Serve Hot with steamed rice or make a roll or have it with nan or a paratha.
