16.01.2022 Our team has been getting together each Wednesday via a zoom meeting, we check in to see how everyone one is. We have a little fitness comp going, share book/tv.../movie reviews & even have little cooking demos! Here is one of our Wednesday Wellness cooking demos! Chicken Cacciatore with Daniela DAlessandro our Business Development Manager. INGREDIENTS 1-1.5 Kgs of Chicken Pieces Olive oil Teaspoon of butter Plain Flour Salt and Pepper 2 cloves of garlic peeled and sliced 1 x Large brown onion - sliced into wedges 1 x glass of dry white wine 2 Celery stalks chopped 2 x medium carrots sliced 1 x Capsicum sliced into strips I x can diced tomatoes 1 x sprig of rosemary Handful of black olives METHOD 1. Pat dry chicken pieces, lightly dust with plain flour and season with salt and pepper 2. Heat pan and add a good amount of olive oil, teaspoon of butter and garlic. 3. Once garlic has turned golden, remove from the pan and add sliced onions to the oil cook till softened. 5. Add chicken pieces skin-side down. 6. Once chicken has been seared on both sides add a glass of dry white wine. 7. Cook for a further 10-15 minutes with the lid on. 8. Once the wine has evaporated and the onion has caramelised, add the vegetables, diced tomatoes, a sprig of rosemary and black olives. 9. Return lid to pan and simmer for 35 40 minutes or place in oven for 30 40 minutes on a moderate heat. 10. Once ready, serve with either warm crusty bread, mashed potatoes or rice and a nice glass of wine.
