10.01.2022 "Before every battle, every protest, we told each other: 'If you live, don't forget me'. I am paying a debt to those I lost during those difficult years. My only regret is that I haven’t done more." A true hero, he has not died, he’s gone home. https://www.theguardian.com//former-greek-nazi-resistance-

A frappé coffee, Greek frappé, Nescafé frappé, or just frappé is a Greek iced coffee drink made from instant coffee, water, sugar, and milk. The word is often written frappe. The frappé was invented throu...gh experimentation by Dimitris Vakondios, a Nescafe representative, in 1957 in Thessaloniki. **Variations of Frappe coffee according to proportions of ingredients** - Sketos (plain, no sugar, no milk): If you like your frappe coffee without sugar and milk, then add only 1-2 tsps of instant coffee, depending on how strong you want your coffee, and cold water. - Metrios (medium sweetness) : 1-2 tsps of instant coffee, depending on how strong you want your coffee, 1-2 tsps of sugar (equal amount of coffee and sugar) - Glykos (sweet) : 1-2 tsps of instant coffee, depending on how strong you want your coffee, 2-4 tsps of sugar (double the amount of sugar than coffee) - Me gala (with milk) : 1 tbsp evaporated milk (the amount of milk can vary according to preference) GREEK FRAPPE ** RECIPE BY Author: Eli K. 07.01.2022 May the resurrection of our Lord bring us all closer together, as well as giving us all health, peace and serenity in our lives. Stay safe everyone

07.01.2022 Following increased and overwhelming concerns about the COVID-19 virus, the Pan Macedonian Federation of South Australia has made the difficult decision to canc...el this year’s Dimitria Greek Festival, which was to have been held in November at Kings Reserve. We are very disappointed that we are unable to hold the festival for our members and the wider South Australian community, but we know it’s the right decision based on the information we have to date. Our primary concern has always been the health and safety of our volunteers, vendors and all the people who have enjoyed our Dimitria Greek Festival over the last 41 years. We wish to acknowledge the State Government of South Australia for their strong leadership they have demonstrated and for the way they have marshalled the entire state into observing the directions. To the sponsors of the festival, past and present, we hope that you all get through this challenging period and we urge all our members and the wider community to support those who now need our support. And to all of you, take care of your family and friends and we look forward to seeing you at next year’s Dimitria Greek Festival. Evan Tsiaparis President Pan Macedonian Federation of South Australia Inc.

05.01.2022 On the Twelfth day of Christmas, my Yiayia gave to me...TWELVE FLAMING SAGANAKIS, eleven cold frappes, ten tiropitakia, nine yemista, eight Mythos beers, seven bunches of horta, six pieces of feta, five kalamata olives, four lamb souvlakia, three dolmathakia, two koulourakia, and one kourambie. In Greek cuisine, saganaki (Greek ) is any one of a variety of dishes prepared in a small frying pan, the best-known being an appetizer of fried cheese. This flaming chees...e ritual was started by restaurateurs in Chicago, who encouraged customers to yell, 'Opa!' as the plate was being ignited. You can recreate the tradition at home in minutes, whether you'd like to spark up a little romance with an old flame on date night or just try a fast and fun cheese dish on a chilly weeknight. Serve with sliced fresh or grilled bread. SAGANAKI (PAN-SEARED GREEK CHEESE APPETIZER) ** Recipe by Chef John via allrecipes.com** - Prep Time: 10 mins - Cook Time: 3 mins - Total Time: 13 minutes - Servings: 2 piece - Tools: 1 small cast iron skillet Ingredients: 1 (4 ounce) package kasseri cheese 1 tablespoon water, or as needed cup all-purpose flour, or as needed 1 tablespoon olive oil 2 tablespoons brandy, at room temperature lemon, or to taste 1 tablespoon freshly chopped Italian parsley Directions: 1. Brush each side of the kasseri cheese with water. Dredge both sides in flour, making sure the surface is completely covered. 2. Preheat a well seasoned cast iron skillet on medium-high heat until smoking. Pour in olive oil. Carefully place the floured cheese in the hot oil. Cook until cheese begins to ooze and a golden brown crust forms, about 2 minutes. Quickly flip cheese over with a spatula. Fry until bottom is golden brown, about 30 seconds more. 3. Remove skillet from heat and transfer onto a napkin-lined plate. Pour brandy over the cheese. Light the brandy using a fireplace lighter. Now you can exclaim "Opa!" and marvel at the fire. Squeeze some lemon juice on top to extinguish the last few flames and garnish with parsley. 4. Garnish with oregano if you prefer. ***HOT TIP - "I've also done this with a cheese called halloumi, which is tasty, but doesn't melt at all, and for me that's the best part. You can also use graviera, kefalograviera, kefalotyri, or even a firm feta cheese." - Chef John*** ENJOY!! xx credit: https://www.allrecipes.com//263750/flaming-greek-cheese-s/
