25.01.2022 I am receiving a lot of queries regarding when I will be baking sourdough again. I am still trying to solve issues with my starter and have also built an entirely new starter. A new starter is ready to bake with in ten days. I will keep trying this week with my old starter and let you know when the sourdough are back in action- this just one of the joys of working with wild yeasts. Has anyone else had to just start all over again after the starter went through some cold shocks? . . #wildyeasts #wildyeaststarter

21.01.2022 Hi! A reminder of our new opening hours, starting this week. Thursday: 10am to 3pm Friday: 10am to 3pm Saturday: 10am to 3pm ( and at Mount Claremont Farmers Markets 7:30am to 11:30am) Sunday: 10am to 2pm... Sundays are pretty quiet, so this is a good day to purchase breads and scrolls. Just a heads up if Sunday trade remains quiet we will close on Sundays too. ( and with all this gorgeous weather cooking up... we think people would rather be at the beach than shopping). Thanks for your understanding, as a small bakery we did not have the trade to warrant staying open the longer hours. We look forward to seeing you at the bakery or markets this week. The fruit and walnut loaf is back on but I am still working on the black sourdough. The buckwheat sourdough that had been in development, went out beautifully this past Sunday, so hopefully I have nailed this recipe and you will see it as a regular. I have also reintroduced the Panna Sourdough (Wholemeal). As we are small batch we do not bake the entire range every day, so keep an eye on Stories to see the daily range and I can take a hold and if you message me. Direct Messages are easier for me to manage , thanks, phone calls are difficult as my hands are usually in dough. 21.01.2022 Saturday Vibes- we are trading at @mtclaremontfarmersmarket this Saturday and the Mckimmie Road bakery! Our famous cinnamon scrolls and tasty tomato and cheese scrolls are available at each location . Plus, sourdough and yeasted loaves, including Fruit and Walnut! Fruit Mince pies are only available at the bakery this weekend, we will aim to have some at the market next Saturday. Next weekend is our last market for this year and from 24 December Panna will have a shut down u...ntil 15 January, so it’s a good time to stock up. 15.01.2022 We are reopening today.... but in a somewhat low key manner! Our sourdough culture is struggling to stay strong in the cold temperatures and so we have only a small quantity of a Buckwheat sourdough. And we do not have scrolls today or buns. We are experiencing multiple issues in production and gluten free is notoriously difficult to work with when you change any variable. We do have Wholemeal Loaves, Italian loaves and Fruit and Walnut. Please just be patient as we try to resolve these issues and as I train up bakers to assist in production. We also have sweets. Apologies folks, its just going to take some times to get everything back on track. . . #glutenfree
14.01.2022 Its business as usual for Panna Artisan from Thursday 6 August! We will be open Thursday and Friday 8am to 6pm , Saturday 8am to 3pm and Sunday 8am to 12 noon. We are still working through a few challenges to upscaling but we expect to have more breads out to you all the same. In a few weekends time we will be back at #mtclaremontfarmersmarket (date to be advised) on Saturdays and we will commence at the new #showgroundfarmersmarket on Sundays soon after! Theres lots goin...g on behind the scenes and some really exciting projects to be announced and you will start to see your favourite GF breads more readily available in the regions. 12.01.2022 ATTENTION! Please read entire post;) We are reopening this Thursday for trade. Our new operating hours are in our Instagram bio and Facebook page information (ignore the Google page for our business its incorrect and I cannot control this page-its googles page not mine. I have tried to edit etc). EDIT Wednesday is also closed! Please be aware that while our capacity to produce more breads has increased we are currently being impacted by Covid related supply issues that are... limiting how many sourdough we can produce. There is a world wide shortage of materials, such as bannetons - the forms we use to shape and hold our doughs while they ferment and I am still waiting on my order, and the flow of grains and seeds is being held up in quarantine. We are currently running very low in some stock and while we can open this week, if we are unable to source these ingredients this week, we will potentially be closed the following weeks until supply is restored again . This is obviously beyond our control. We are also struggling against this cold weather to produce sourdough, even with proving cabinets (wild yeasts are not fooled by artificial warmth , I find!) we will however, be able to produce more of our commercially yeasted loaves to bulk out bakes. As we are now open until 6pm Thursday and Friday, if you are planning to head to the bakery after work to purchase breads, please call earlier in the day or the day prior to preorder and ensure hold a loaf. If we dont answer the phone we will call you back ( our hands are just busy... ). We are having a website built soonish so that you will be able to pre order and hold a loaf at the bakery and markets. And finally, we are training up new bakers and there is so much for them to learn so please bear with us while training occurs and while we are still finding our way around the new oven, cold weather and new equipment. 05.01.2022 What a wonderful week it has been! Thanks to everyone who comes into our little bakery and shows us love and support! The thing I am loving about being open longer hours is that I am getting more time to stop and chat and get to know you all better. I am very grateful for every inch of encouragement and enthusiasm you display; even if you catch me on a down or low day, your gratitude gets me through, so thank you to everyone . I though I would just give a bit of an upda...te regarding sourdough production and when we will be back into the swing of it. Well, to start with the Millas sourdough is back in production . Other behind the scenes issues, impacting when sourdoughs will be back in production are numerous; chief amongst these are issues with drought impacting availability of many crops in Australia; delays in transport coming from Victoria, caused by Covid and then trying to source seeds / grains from overseas to continue supply, while Australian crops are out. We are also still waiting on bannetons to become available ( these are the baskets that hold our doughs while they ferment. These have been out of supply for months, and without them our production is limited.) Anyway, I am hoping some pallet loads of ingredients are delivered next week. My starters are happy and we will start to reintroduce sourdoughs one by one. Just lastly we intend to return to @mtclaremontfarmersmarket this coming Saturday.
