Let's get acquainted with the man behind our favourite dishes. Q: What do you love most about being a chef?... A: The creativity. I’m always looking for ways to improve on food, whether it's less wastage, how it’s plated or the taste. Q: What’s your favourite dish on the Paper Crane menu? A: The pad kaphrao. I love the waft of holy basil (which is how the dish gets its name), combined with the chilli and fresh vegetables hitting the sizzle plate and being carried through the restaurant is something I love every time. Q: What's your favourite ingredient in the kitchen? A: Anything fresh! From fresh fruits and vegetables to secondary cuts of meat. Of course, the more local, the better!
