18.01.2022 We are super excited to be able to host you in store very soon :) to be honest I am not completely believing this yet as it would be too disappointing if they change the plan again which could happen.. but for now I can be happy to see people who are farther 5km from us now can come to PAPIRICA!!! I’m preparing extra Shokupan bread next two weeks for you who haven’t tried it yet!! Also other your favorite dish will be available too :) make sure you book them in advance sometimes they sell out early in the day...

14.01.2022 How are you all doing first week of second lockdown?? Hope everyone stay happy and healthy at home :) @papirica_cafe i feel like I really need to do more exercise as my Futsal team ‘donkey united’ doesn’t have a game for 4 month now and it’ll be more than 6 month I think... Akira has been busy still working as full time and also baking for @only.cheese.cake! Mei has extra one week school holiday and going to be remote learning which will give me more work to do haha. we star...t watching Japanese anime called ‘one piece’ on Netflix! Anyway we stay home mostly and making happy each other :) @papirica_cafe definitely got much more effected by the situation this time, very quiet here which is understandable I guess people are trying to stay home. I do not wish to do well of course under this crisis but I do strongly wish to continue Papirica till one day things get healed for myself, family and people who has supported us!! We will creat the ideas how we can make small happiness @papirica_cafe for people to pick up :) We decide to do again from first lockdown HIROSHIMA OKONOMIYAKIweekend special! 13.01.2022 'Matsu Sando' is the name for 'Katsu Sando' (Pork cutlet sandwich) from my little project 'Matsuda's Deli'. I have been enjoying baking Shokupan (Japanese style soft white bread) every morning, which becomes part of my dayly loutine.... Finding something you can do at home and make yourself happy has been very important. At the moment, Baking 'Shokupan' and making sandwich with my bread is definitely something I am having a lot of fun :) on top of it I can share that with you thru Papirica. Here is my 'Matsusand' -Homebaked 'Shokupan' quickly pan fried with bit of butter makes bread slightly crisp and toasty outside but still keep inside soft and moist. -Fresh Pork loin Katsu (cutlet) fried with 'Fresh' Panko (Bread crumb) not dry one. Using fresh Panko is the key for crunchiness. -Papirica Homemade sauce. Needless to say, our Okonomiyaki sauce. -Carramelized Onion. I caramerize onion with olive oil and Dashi made from Shitake, Konbu stock with soy sauce instead of balsamic oil. It gives natural sweetness of onion to the sandwich, Dashi flavor makes sandwitch to more Japanese and another big reason for this onion holds the sauce on top of Katsu not running away from it. -Fresh Cabbage coleslow is the tradision for Katsu, comes with Homemade Sesame Mayo and mustard. I will keep making 'Matsu Sand' for now and hopefully something else sometime soon. My production of bread is very limited we sell out every single day since day one. Thank you.

12.01.2022 We were sooooo busy today @papirica_cafe thank you so much for your continuous support.. it was mixture of people, many regulars coming for their favorite dish and also a lot of new customers who coming for trying my sandwich :) Thanks to the article from @timeoutmelbourne written by Rushani Epa. My project ‘Matsuda’s Deli’ Shokupan sando was chosen ‘the best sandwiches in Melbourne’!!! How wonderful surprise, it’s been only three weeks since Matsuda’s Deli started! I didn’t expect the project doing this well but it’s very amazing feeling that you enjoying :) I know I’m not the best at baking yet and it’s not what I’m aiming to be. But I’m very proud of serving things like ‘Katsu sando’ (a.k.a Matsu sando) with freshly cooked Tonkatsu with our papirica sauce and homely baked by me :) rustic imperfect shaped delicious Shokupan.

09.01.2022 Hi all:) Have you been enjoying visiting your favorite cafes, restaurants last two weeks?Papirica has been really busy, I am so grateful to have you back in the space ( also very happy to see 0 new cases everyday) :) thank you very much guys for your wonderful support! I could proudly say that we did everything we could to go thru the tough time... and those hard work and efforts bringing many people back to papirica is brilliant and was worth it. Espresso coffee, Akira’s Ch...eesecake, Hiroshima okonomiyaki, Tonkatsu, and now we do even homemade sandwiches...ha!! My menu is so much bigger than ever before, lots of juggling going on in the kitchen when it’s busy but happy. On the other hand I never thought to expand the menu like this. Simply because we specialize good okonomiyaki that’s what I need to be best at and focused. 2017 papirica has opened with smallest budget and smallest team. I even had to crowdfunding for starting this business. no money but had good business idea and passion. Only three types of okonomiyaki was on the menu at the beginning, nothing else. As PAPIRICA growing slowly I was developing things as go with the flow. It was fine didn’t need much more, I could just focus on practicing and learning good okonomiyaki. But situation changes specially this year I needed to come up with new ideas how we could continue to excite people to survive. Running business is competitive and survival... Anyway what I want to say is nowadays we have lots and lots of new customers which is great, but some people don’t even know what we are and what we are good at as a result of too many good stuff on the menu haha :) please try our okonomiyaki, the sauce we make here from scratch using Fresh vegetables, fruits and spices and many more things in it, takes 2 to three days to complete. No MSG, make it possible to cook vegetarian, vegan okonomiyaki with my sauce without any animal products. Packages sauce has a lot of artificial flavor and chemicals in it. Please don’t say it is different from okonomiyaki you had in Japan.. even in japan every shop has their own flavor. it is different! That’s what we are trying to be. Simple but cooked properly. 09.01.2022 Thank you for your big support for Papirica Specially during Lock down period when we were doing 'Kiosk' take away style.. I also want to thank Akira for her huge contribution towards Kiosk 'Akira's Cheesecake' That became big part of Kiosk soon after it came out. Kiosk was collection of small happiness Coffee, Okonomiyaki, Homemade Japanese sweets etc you can take small hapineass to your home. I was still looking for one more thing.... I asked Akira if she is interested to serve her Cheesecake at Papirica. as I remember she has baked very nice one before, it was still rustic and needed to be improved, but it was already full of sweet cheesy love was in it.. that is the magic spice of her cheesecake I want you to try. She spent a lot of time in kitchen every day, practice and experiment new things, different ingredients until she found out the best, unique, original recipe.As soon as it was on the menu Akira's cheesecake got so popular... Sometimes didn't last for half an hour till sell out... lots of orders for mothers day gift. I asked her to continue 'Akira's Cheesecake' after lock down. Also start to think new project what she can do next. She makes people happy from her cheesecake. she also deserve to be happy from her hard work. I told her to start her own cheesecake shop not acctual shop, it will be insta account where people can order her directly so that she can make some money which she deserve. At the moment I buy her cheesecake with whole sale price and sell it at papirica which means we share the profit not much for each other. But if she gets order directly from you she could gets all the profit Akira spent nearly 10 thousant dollars from her savings recently to apply her visa to immigration. If you have experience dealing with immigration you know they rip off from you... it is quite personal thing you don't need to know. 08.01.2022 One day I was filming Akira making coffee with my camera. I thought everything was so beautiful that moment. I used to have little retail shop called @ura_store in Fitzroy for about 8 years... I have enjoyed working there everyday listening music and being surrounded by items I have collected :) spent a lot of time there listened so much music (I was even making music sometimes ) which made me not to listen music when I go out as l started to enjoy listening the noise of everyday life, people chatting, dog barking etc. Now I like the blend of lovely music and coffee making noise :) maybe smell is also giving something special on top of it too.. one day this beautiful ordinary but luxury life will come back to us hopefully. crossed fingers.

01.01.2022 I hope you are still happy and healthy both physically and mentally even in the restrictions :) since stage 4 has begun PAPIRICA has been of course quieter, but this week Has been much better than the first week and many people have supported us in different ways which becomes my big motivation, we won’t give up to try new things for this challenging time!!
