They were a seasonal food consumed during the spring, and started as a pancake filled with the new season's spring vegetables. The practice of ‘biting spring’ was believed to ward off disaster and evil and would have been a welcome change from the preserved foods of the long winter months. 06.01.2022 So humble is the Pappadum, Papad, Papad, Poppadom. An integral part of meals in some parts of India, while just an appetizer in others, the pappadum has a fascinating history, with an interesting link to women’s empowerment in the country. Lijjat was the brain child of seven Gujarati women from Mumbai who wanted to start a venture to create a sustainable livelihood using the only skill they had - cooking. This was in 1959. Three months later Lijjat expanded to 25 women who made Papads by hand. The women’s cooperative now provides employment to 43,000 women across the country.
