07.01.2022 Who said chocolate wasnt healthy? These delicious, fudgy, nutty brownies are jam-packed full of magnesium which helps to support muscle function. Magnesium ...is important in how our muscles relax and contract and our muscles certainly do a lot of that every day. Eating dark chocolate and nuts is a great way to boost those magnesium levels to help you move better. Youll also get a healthy dose of antioxidants too! Fudgy Nutty Brownies by Jillian Foster Natural Health Ingredients: - 200g dark chocolate (minimum 70% cocoa), finely chopped - 130g Medjool dates (fresh, pitted), finely chopped - 180g coconut oil (organic, cold-pressed) - 30g coconut flour - cup nuts (peanuts, almonds, brazil nuts, walnuts), roughly chopped - 4 eggs - tsp vanilla extract - Pinch of sea salt Method: - Preheat oven to 190C - Line a 22cm square baking dish with baking paper - Add chocolate, dates, coconut oil to a double boiler saucepan and whisk on a low heat for 5 minutes until melted and smooth - In a bowl combine coconut flour and nuts - Add melted chocolate/date/coconut oil mixture to the flour and nuts and mix well - Add eggs, vanilla extract and sea salt to the mixture and mix until well combined - Scrape mixture into prepared baking dish and top with chopped nuts or leave plain - Bake in preheated oven for 18-20 minutes (careful not to overcook or they wont be 'fudgy'!) - Allow to cool before cutting into squares. Keep refrigerated and eat within 5 days (if they last that long!) If you dont have fresh dates, you can use dried dates, just soak them for at least an hour first. Lentils are an incredible source of plant protein and, when paired with a whole grain ...such as brown rice, offer up all essential amino acids to help your body repair! Due to their fibre content, lentils also help balance blood sugar, preventing irritability and dips in mood. Filled with so much goodness, this warming & mood-boosting lentil dahl is one to add to your weekly meal rotation! Ingredients: . 2 tbsp of ghee or coconut oil . 1 small brown onion . 2-3 cloves garlic . 1 tbsp of fresh grated ginger . tsp sea salt . 1 generous helping of cracked pepper . 1 tbsp mustard seeds . 1 tsp fennel seeds . 1 tbsp turmeric . 1 tsp whole or ground cumin . tsp cinnamon . tsp ground coriander . tsp cardamom . Pinch of nutmeg . 1 small fresh chilli or chilli powder to taste (optional) . 2 medium or 1 large carrot, sliced into rounds . 1 medium sweet potato . 1 can full fat coconut milk . 2.5 cups vegetable or chicken bone broth/stock . 2 cups split red lentils, soaked overnight in water & rinsed well . 1 cup frozen peas (optional) . 1 cup of fresh or frozen spinach (optional) Method: 1. Melt the ghee or coconut oil over a medium-high heat 2. Dice onion and add to the pan, cooking until translucent 3. Add in crushed garlic and grated ginger - add fresh chilli here if using 4. Add mustard seeds and fennel seeds, toasting for 1 min. 5. Add in all other spices and stir 6. Add chopped carrot and sweet potato 7. Stir in lentils until they are well covered by the spice mix 8. Stir in coconut milk and broth/stock and bring to a boil, then turn down to simmer for approx. 15 minutes until liquid reduces and the lentils become more of a thick porridge consistency. 9. Add peas and spinach if using and cook for a further 5 mins. 10. Serve with brown or basmati rice, quinoa, or on its own. 11. Top with fresh coriander, parsley or toasted cashews! #MeatlessMonday #WinterWarmer #Recipe
