At the moment we have black, yellow and orange carrots in stock!! Heres a little info on the attributes and health benefits of each... The orange carrot was once a novelty which was first cultivated just over 400 years ago. They contain beta carotene, with some alpha-carotene, both of which create orange pi...gments. The body converts the high content of beta carotene into Vitamin A, which is essential to the immune system for general well-being and healthy eyes. Yellow carrots contain xanthophylls, pigments similar to orange beta carotene, which help develop healthy eyes and aid in the fight against macular degeneration. They may also be useful in preventing tumors associated with lung and other cancers. Black carrots have high levels of anthocyanins - a powerful antioxidant that eliminates free radicals from the body.
