Delicious and so easy to make Ingredients: Butternut pumpkin... 1 onion 1 garlic clove 1 cup kimchi 2 Tbsp. extra-virgin olive oil 1 pack 4 cups vegetable broth or water 1 packet of Pasta roma! macaroni Method: Peel pumpkin and cut into cubes. Peel and chop onion Crush garlic clove Coarsely chop kimchi Add oil to a large pot on med-high, once hot, add in onions and stir for approx 2 mins. Add garlic and kimchi and cook for approx 5 mins until kimchi is starting to brown. Add pumpkin to pot and reduce heat to medium. Cover and cook until pumpkin is tender. Approx 6-8 mins. Remove lid and stir in pasta along with vegetable stock. Cook until pasta is al dente and most of the stock is absorbed. Season with salt and pepper to taste.
