We asked her a few general questions that we will be posting over the coming weeks. Favourite bottle of white wine with Thai food? 1). Egon Müller, Scharzhof, Mosel-Saar, Germany, 2015. This wine reminds me of words spoken by a particular wine-writer, she said On the palette, Riesling is meant to move, to surge, to burst, to dance, to arc, to soar. It is the most kinetic and alive. Sustainable practice with slate gravel soils from Mosel & Saar, the wine brings a lot of surprises and energy along with an elegant presentation to balance the flavors of Thai cuisine, especially our Thai-Portuguese lotus stem salad with Australian redclaw crayfish. 2). Weingut Keller, Abtserde GG, Rheinhessen, Germany, 2015 I call this a magical wine. A full-bodied, complex and pure wine which displays stunning mid-palate depth, with a seamless, electric girdle of acidity, stunning mineral definition on the backend, and a very long laser-like and vibrant finish. I can have this wine with a stock based Thai soup, a more heavy salad, curry and our grill with relish. In a way it is almost a magical all-rounder, that becomes an extention of Thai dishes. #PasteBangkok #PasteAustralia
