Although 2020 was an interesting, challenging one for many hoping it also gave us the opportunity to find the time and space to connect with our immediate families andvtreasure those moments. 20.01.2022 Almond Biscuits - simple ingredients make for a savoured treat when you need that little bit of sweetness. In this version I halved the sugar and still got great results. I did add pure almond extract to get that bitter almond acquired taste. Some love this (like me) but others won’t. If you don’t like it, simply don’t use it. 20.01.2022 Gingerbread houses for 2020 are back. This time bigger and better. Bespoke houses designed and create individually to have their own character. Their size is a little under 30cm x 30cm so large enough for a Christmas feast. I know that one of the highlights of our family Christmas' is to see the kiddos smash into the house at dessert time. 19.01.2022 Ok so this is how you do birthday dessert!!!! Hubby chose his own birthday cake - a chocolate mousse cake. Is was a huge success. Nice flavours - cake bake with orange flavours topped with a light milk chocolate mousse, so light and fluffy. Decorated with dark chocolate ganache drizzle. Topped with cocoa nibs and freeze dried raspberries for some tartness. It was so morish and I will definitely be make this one again. 04.01.2022 Fruit Mince Tarts are a must for Christmas week. The spices and fruit with finely chopped apples were cooked down to produce a mooshy texture yet still defined. They macerated in their flavours for a week before being spooned into homemade flaky pastry. They are so delicious I had to stop at one..... at a time.
