15.01.2022 Inspired by my Italian heritage this roast eggplant and grape tomato bruschetta was super delicious and super easy to make. I used pre baked bruschetta pizza bases which are thin and dressed with herbs, so all you have to do is toast them. I chopped the eggplant into small cubes and sprinkled it with sea salt flakes, oregano and black pepper then a drizzle of olive oil. Bake for 30 mins. While that cooks, I used a punnet of grape tomatoes cut in half, 2-3 cloves or garlic, chopped parsley and basil, tossed it all in a bowl with olive oil and sea salt and let it marinade while the eggplant is roasting. When ready toss eggplant in with tomatoes, scoop it on the bruschetta base and enjoy the flavour hit of Mediterranean food that's full of love. 12.01.2022 Sometimes we lose sight of how blessed we are, especially with the way things are right now. It's been an awful year from a business perspective and as much as I hate that I've only operated my studio 3 months of this year it has forced me to explore and appreciate so many other things in life. I'm a face to face trainer, have been for 25 years so adapting to online classes has not been my favourite thing. But I have come to enjoy it and appreciate that with the technology we... have today I can still see my friends and clients and support each other. I have been blessed with amazing friends and clients who surprised me this week with gifts of thanks and gratitude for helping them get through ISO. We have made some amazing progress and believe me when I say it has helped me too. I'm a people person and I love being able to make even the smallest positive change in your lives. So thank you @brookesta01 @cuddles_cat @katelrickard @michellebennett1503 for your kindness and thoughtfullness and to all my lovelies for joining in and helping each other stay sane. 11.01.2022 Here's a vitamin pill in a bowl... Pumpkin leek and ginger soup 1/2 butternut pumpkin 4-6 potatoes... I leek finely chopped 1 cup frozen peas 2 inches of ginger grated 2 cloves of garlic 1 tbsp turmeric 2tbsp of veggie stock paste (Thermomix) plus enough water to cover vegetables OR 2 litres of liquid vegetable stock In a large pot saute leek, garlic, ginger and turmeric Add diced pumpkin and potato. Heat for a few mins then add the liquid stock. Simmer until veggies are soft then use a stick blender to puree. Add frozen peas and heat through. Serve with a sprinkle of parsley. 08.01.2022 It's been one of those days where your routine is turfed out the window. We had some storm damage to our roof and the heavy rain over the weekend made its way through the roof cracks to our plaster. Needless to say, the roof collapsed under the weight of drenched insulation bats. Thankfully we had a quick response for repairs but my house is upside down. I still managed to make a healthy lunch though... No excuses right? I could so have gone to a cafe but with a shortage of g...ood quality healthy vegan meals in the area I'm happier cooking it myself. 4 portabello mushrooms cut in quarters 2 cloves of garlic (great immune booster) 1/2 cup of chickpeas Handful of cherry tomatoes (vitamin C to help absorb non haem iron from veggies) a dash of organic coconut aminos chilli flakes, salt and pepper to taste a couple of handfuls of baby spinach Saute everything except spinach in your choice of cooking oil, line your plate with spinach and when cooked, place the mushroom chickpea stir fry over the spinach and let the heat wilt it gently to preserve nutrients. 01.01.2022 Here's a quick pick me up meal that's delicious and nutritious. . . 3 Whole portabello mushrooms 1 avocado... 1 tomato (seeds removed) 4 zucchini and lentil falafels 1tbsp lemon juice 1tsp olive oil Pinch of chilli flakes Pinch of sea salt flakes . . Heat olive oil and Saute mushrooms in fry pan While they cook dice avo and tomato, sprinkle with lemon, chilli and sea salt, toss and set aside. When mushrooms are almost cooked toss in falafel to warm up. Lay mushrooms in a bowl, top with avo/tomato mix and enjoy.
