22.01.2022 Something different... we went back to the races! Flemington was finally allowed patrons - all be it only a 1000 - and we were lucky enough to be picked in the ballot. To say it was "weird" is an understatement, weird in a good way, but a venue that i am used to sharing with 50,000 + thousand people, lining up, lots of noise, and to be greeted by everything that was familiar minus the crowds! Melbourne weather turned it on, CW was absolutely in her element and it was a day we will never forget!
21.01.2022 Jet and I set ourselves a fishing goal for these school holidays. To catch a Freshwater River Blackfish. He had never seen one before, let alone catch one. Today on our first outing after hours of planning, research, talking, scheming and dreaming we landed 10 of these incredible creatures. We learnt a lot, enjoyed each other’s company, had some great chats and thoroughly enjoyed every minute. It doesn’t need to be a grander to be be totally satisfying. Can’t wait to do it again soon. Love ya mate.

20.01.2022 Happy New Year!!! We saw 2020 out with a bang at a 70's themed party celebrating some great mates. We know many of you had really crappy years and the latest COVID outbreaks have not made the end of 2020 any easier. 20.01.2022 Another incredible day on Port Phillip Bay, literally fishing in my back yard. Was lucky enough to have the IFISH w TACKLEWORLD crew there to document the madness. Special thanks to Shaun Clancy from Humminbird Australia & New Zealand and Chris from Cassar Fishing Charters for all of their help. The sea monsters were out to play & we kept a couple to share with friends.

20.01.2022 This might just look like an ordinary photo of a group of people enjoying a nice lunch out but it is so much more than that. This is the first time we have eaten out since March 16th. In the big scheme of things, it's not hugely important, but man did it feel so good! Whilst seated we didn't have to wear masks, (another novelty!) The people were amazing and the land just breathtaking. It is where a lot of the film AUSTRALIA was filmed and it isn't hard to see why. Hope you enjoy the upload. 13.01.2022 Got a heap of questions re the Turkey we "spun" yesterday. So CW has put the process & recipe below for you! Enjoy. PW Our turkey was 4kg, relatively small for a turkey but the brining liquid is the same regardless of the turkey size. Place 3.85lt of warm water into your container/bucket (must have a sealable lid - we used a Tackleworld Bucket )... Dissolve 1.1/2cups of salt into the water. Add 3 litres of Apple cider / sparkling apple 1 litre of chicken stock 9 gloves of minced garlic 6 sprigs of Thyme 2 lemons - zested then cut up 1 orange - zested then cut up Cloves - optional Mix it up in your bucket and add the turkey! Try to get the turkey totally covered in liquid and the breast side DOWN. Then seal bucket and place in the fridge for between 24 - and max 48hrs - we did 36hrs. Remove turkey 2hrs before cooking. Rinse it under freshwater. Then pat dry. Release the skin from the meat gently (google this if you have never done, you don't want to pierce the skin.) Make a butter "rub" you can add whatever you like to this but we just kept this one simple. Butter (good butter!!) Salt and any herbs you like. We didn't do herbs this time - just salted butter. Then get as much of the butter under the skin & massage it through so it gets right in over the breasts etc. Once you have done this use the rest of the butter to massage the turkey and add a bit more salt. Makes a beautiful crispy salty skin! Inside don't overcrowd the turkey, usually 1 apple, 1 onion, herbs, and 1 lemon. We cut them in 1/2. Then use one 1/2 of the onion to "seal" the entrance and this also serves as a brace to put your spinning rod through the middle of. Have your Mini J ready as per usual. Work on 45mins a kilo. Or internal temp between the breast and thigh of 165c We cooked on the highest rung but with LOTS of heat, be very careful for flareups in the beginning as the butter will ooze out. Move your coals to the ends of the spit until this eases. You will need to add more charcoal to keep the heat up. When it is ready make sure you let it rest for at least 45mins, preferably uncovered. 10.01.2022 Was fortunate enough to get out in absolute glamour conditions yesterday. Plenty on the chew. We got a seafood medley, 3 of our favourites. Lots of flatties, plenty of squid and more than enough whiting to keep us all happy at dinner time for a while!! But today is all about the Melbourne Cup. CW is ready for fashions on the front lawn (Lockdown peeps will get this!) and the sun is shining. Who are you backing in the Cup?
