Join Chef Rino at the Pause Academy to learn everything you'll ever need to know about fresh Pasta... In this class this Wednesday evening we start with an aperitif (because that's what Italians do!), then move straight into the sauces...and as they are simmerring and building flavour and depth, we move onto the many styles of hand crafted Pasta so loved by all!... Spaghetti, Fettucine, Taglietelle, Ravioli, Maccheroni...all rolled by hand, or with a pasta roller. Cut and shaped by knifes, "guitars", rollers and skewers, you wil leave with the ability to render delicious authentic fresh pasta even with the minimum amount of equipment at hand. Wednesday night sees our Masterclass at the Pause Academy, this week "Know Gnocchi" (although there's only 2 places left), then Date Night on Thursday Night (3 courses for just $69), then our "Degustation-Driven" evening services Friday & Saturday, and of course our fabulous "a la carte" 3 course $59 lunches Saturday and Sunday... Yep, only $59. One of your main course choices is this luscious Wagyu Rump Eye we just had delivered. A 6+ marble score, raised hormone free and naturally ranging from the Gulf Country of Nth Qld by Stanbroke Beef, this exact same Wagyu is served at many of the premium CBD restaurants (with a higher... price for the steak than our entire 3 course menu!!). A 280g Wagyu Rump Eye, gently cooked sous-vide, then sealed on the grill to develop that intense Wagyu crust. 13.01.2022 Wow...a year ago already!!! 2020 was such a difficult year both for myself personally, and for the Pause Family. With many European families in our mix (including mine), it's been a huge challenge for us. I hope to never live through another period as difficult, uncertain and dark. ... Yet, I'm so proud to see we have survived such a tumultuous period (can't believe it was a year ago already!) and have emerged with our new model that our guests are absolutely loving. Smaller numbers, more sophisticated dishes, personal attention for all. Our guests are also loving the transformed venue with our "hydraulic walls" allowing us to fully enclose the al fresco spaces and transform into a cosy vast wood heated "room". It was a year ago we were building this...and can't imagine Pause without it. Pause now unashamedly offers a true "Restaurant Experience" with a degustation at it's centre. It is far more than a nice meal...it's an experience to remember. A chance to share with others something truly special around a table, and be a little spoiled. So my heartfelt thanks to Chef Rino, Luca our Manager, and all the amazing Pause team for seeing this through. We have some truly exceptional people in this restaurant... ...and most importantly, our heartfelt Thanks to our fabulous guests. (Especially the ones that we can't seem to get out of our Restaurant, the return offenders! You know who you are!!) Some very exciting news to come soon. Pause is going "Next Level"...

This is Caroline Hammond, a deeply talented singer/songwriter who will be joining us at Pause providing the soundscape for our next Sunday Lobster Lunch. Caroline is the one on the left...the one on the right is a delicious 1 kilo Tropical Lobster that is the main course of a 4 course Seafood Menu crafted for you by Chef Rino... Caroline will be performing as a trio, matched in vocals by Angela Toohey (that many will remember as... playing Liza Minelli in "The Boy from Oz" with Hugh Jackman), and her keys player, Brendan St Ledger. She has just released a new album, and will be treating us to an afternoon of easy, original music. Caroline is a natural weaver of song stories, playing with the tapestry of life and spinning joyous sounds from the grace and beauty of the overlooked, the everyday and the commonplace...
