Ingredients 40g (1/4 cup) self raising flour 1/4 teaspoon baking powder... 2tablespoons sugar 2tablespoons milk 1/4 teaspoon vanilla extract(optional) 25g butter(melted) 1egg 1tablespoon strawberry jam 60ml (1/4 cup) thick custard Method Step 1 place the flour and baking powder in a bowl and use a fork to stir to combine step 2 use a fork to whisk together the sugar ,milk,butter,egg and vanilla if using ,in a small jug, Gradually whisk into the flour mixture until combined step 3 place the jam in a small bowl and microwave on high for about 20 seconds or until hot. set a side step 4 pour two -thirds of the batter in to a 375ml (1 1/2 cups)microwave safe mug.spoon the custard on top of the batter ,Then top with the remaining batter.microwave on high for 1 1/2 minutes or until risen and cooked through.spoon the jam on top..serve with extra custard...
