16.01.2022 Hi Chicken Lovers, Someone asked me recently why we only sell whole chickens - as I was typing the response I realised there was a heap of information most people probably didn't realise - here is a copy: Why do we sell chicken whole in a bag - instead of cut up pieces?... 1. Whole bagged is the only transparent way to sell chicken - injured, sick chickens are the ones that get cut up - sure some good ones get cut up as well, but abattoirs know to process all the bruised, injured chickens for cut up and leave the healthy good looking birds for whole bagged. Our model and hand processing ensure we maintain a high level of bird care, so we don't have damaged chickens required for cut up. The whole chicken is then sold in a clean transparent bag - there is no hiding! Many store bags have white lines which hide blood water and other things you probably don't want to see - but are also vital in making better decisions about high quality meat. 2. Cut up chicken also requires an abattoir or butcher to cut it up and bag it. Finding a consistent provider can be difficult and as farmers you're often left till last for cut up which reduces shelf life of the end product. 3. There is an artificial drive for different parts of chickens. One year it's breast, the next it is thigh. This is driven by diet trends, cook books, celebrity chefs etc. At the moment it is thigh - we expect it's because shed chicken and breeding practices has led to large breast meat that when cooked dries out and is somewhat flavorless. So thighs now dominate the cut up market, to the point where thighs cost the same if not more than breast meat. This creates a dilemma for chicken farmers who do cut up - many end up with boxes of frozen meat of cuts that people do not want, which leads to fire sales and puts downward pressure on the business. In the end the best way forward is nose to tail meat purchasing, so keeping the integrity of the bird from farm to customer is achieving better outcomes. So, we decided on almost all grounds whole bagged chicken was the way forward. Eat whole chickens, of large sizes - you are almost guaranteed of never eating a sick or injured animal and you may well shake up an industry that accepts bird damage of +50%, plus you're supporting a farmer/butcher by buying the whole animal. Last year was our first Christmas - and we didnt think much of it in terms of chicken numbers - suffice to say we basically supplied the restaurants and had none left for us mere mortals.... So, chickens have a grow time of about 2 months - and our last processing day is the 16th of December (abattoir shuts down of the break). Soooo - does anyone want to lock in a Christmas bird? Were aiming for sizes around 2kg - nature will give was it gives us so it might theyre a bit bigger or a bit smaller. If you want chickens over Christmas and new year now is the time to place your order so we can custom grow! 08.01.2022 Hi Chicken Lovers, First cab off the rank - Peachester Farm has been acquired by Ayton Farm, so we will be finishing chicken production at our farm soon. The acquisition makes Ayton Farm one of the largest organic pastured farms in Queensland.... Ayton Farm had predominately been a pastured organic egg producer with occasional pastured meat chickens. Through the purchase, Rod and Kathy O'Connell from Ayton Farm will be producing pastured chicken every week in greater quantities than we have in the last 18 months. Peachester Chicken Farm will process its last Chicken on the 24th of Jan - so next week and the week after. Asides from happy new year to all of you who have followed along on facebook, we wanted to say a few quick words: Local food is important - it gives you choice - and choice in this day and age isn't a right, it's a privilege. It's been our privilege to provide the food that many of you have made special trips to our farm to buy local quality food. For that we are eternally greatful! Our delivery driver Mark - has been a rock solid part of our family and we have appreciated his insights, humility and he has tackled every problem with integrity and enthusiasm. Mark will continue with Ayton Farm and continue to supply Pastured Chicken around the region. Kev and the team at Moya Valley Abattoir who hand process our chickens - if it were not for this abattoir there are almost no options for small poultry farms between Gympie and NSW..... supporting small farms supports small processors - without them there are literally no food alternatives.
