We have plenty of diced chuck steak available tomorrow at the Mount Pleasant Farmers Market Inc South Australia. 1 TB PEANUT OIL... 1 LARGE ONION, SLICED 1 TB RED CURRY PASTE (I USE KORMA) 600G DICED BEEF (CHUCK OR ROUND) 2 CUPS CHICKEN STOCK 18 BABY NEW POTATOES 1 CUP COCONUT MILK 1 TB LIME JUICE 1 TB FISH SAUCE CHOPPED CORIANDER HEAT OIL IN PAN, ADD ONION AND CURRY PASTE, COOK STIRRING, UNTIL ONION IS SOFT. ADD BEEF IN BATCHES, COOK UNTIL BROWNED. RETURN BEEF TO PAN, ADD STOCK AND POTATOES, SIMMER, COVERED ABOUT 1 HOUR OR UNTIL BEEF AND POTATOES ARE TENDER. STIR IN COCONUT MILK, LIME JUICE, FISH SAUCE, SIMMER 15 MINUTES. ADD CHOPPED CORIANDER. SERVE WITH CUCUMBER RAITA, PAPPADUMS AND GOOD SOUTH AUSTRALIAN RED.
