23.01.2022 Fresh Apricots! We love our local produce here at the friendliest market in Tasmania Penna Valley Farm made their debut appearance at the market yesterday, and we are delighted to be welcoming them back in the New Year on SATURDAY January 4! See you at the Market!

23.01.2022 My absolute fav apricot jam recipe. Passed down the generations of good cooks in my family! Very easy, no time wasted, Apricot Jam 2 kg apricots, stones removed, then chopped 2 kg of sugar... Combine chopped apricots and HALF the sugar in a well buttered saucepan, and leave for 2 hours or overnight to create its own juice. Next morning, boil the ingredients for 20 mins till fruit is soft. Add remaining sugar and boil hard for 10 mins. Do a test by putting a teaspoon full on a saucer, leave to cool for 3 mins, then see if a skin is forming it will be ready if there is a skin. Leave to stand for 10 mins. Bottle and seal, or cool a little more, put in plastic containers & keep in freezer. See more

18.01.2022 #afterthedishesaredone Taste test time for the Penna Valley Farm apricots. I'm not sure, I might need another jar to fully appreciate the flavor! When it comes to #apricotjam it usually is smart to get two jars and stash one in the pantry to discover mid-winter.

16.01.2022 Loving this rain! We have just finished sowing our paddocks to barley and peas, so they are getting a big drink to boost growth. Frogmore Creek, on our boundary, is once again flowing.Water was over our road earlier. Over 2 years since it had any water in it. Its usually bone dry. Even the ducks are smiling, I'm sure !

15.01.2022 And the Chilli Chutney Recipe we just can't resist. Goes with chicken, cheese, pork, beef, lamb, salad, curries... Or just eat it off the spoon like Himself does!!! Apricot Chilli Chutney... 2kg chopped pitted apricots 2 cups packed light brown sugar 2 cups chopped red onion 1 1/3 cup cider vinegar 1 cup golden raisins 8 tablespoons honey 2 teaspoons dried chilli flakes (More or less depending on taste.) 2 teaspoons salt 2 teaspoons mustard seeds 2 teaspoons ground coriander 2 teaspoons ground cumin 2 teaspoons freshly ground black pepper Combine all ingredients in a medium saucepan over medium-high heat; bring to a simmer, stirring constantly. Reduce heat, and simmer 15 minutes or until thick, stirring occasionally. Bottle in hot sterilized bottles & seal immediately. Serve warm or at room temperature.

11.01.2022 So who has been naughty and who has been nice? Either way we don't mind!! This Sunday, just in time for our Christmas market ... apricots are comin' to town, al...ong with cherries, berries + S.A.N.T.A. (And guess what? This year, like all our fresh produce they'll be found in compostable packaging only.) Penna Valley Farm organically grown apricots are a very welcome, seasonal addition to our whopper of a Christmas market this week as we burst out of our seams with every stocking filler and piece of festive produce possible. This is officially our biggest market EVER! Can't wait to see you there.
