25.01.2022 Meat-free Monday made ultra easy thanks to the new, super fresh and convenient cooking kits from @aldiaustralia ! . . If you've been following me for a while you know that I don't mind me a delish #realfood Aldi winner. So when these new fresh cooking kits were released I was excited to try them! The first one I tried is an old fave of mine - Thai Green Curry! .... The cooking kit comes with just a load of veggies and some green curry paste. I picked up some coconut cream, tofu (you could also use chicken or fish) and some cauliflower (to make cauli rice) and whipped up this meat-free meal in 20minutes flat. . Here’s a hot tip to making tofu taste delish - pop it in the air fryer on the chips function and it gets SO nice and crispy! Then add it to the curry at the end so it stays crispy #thankmelater xx . 24.01.2022 Staying on budget without compromising on the fantastic quality, AUSSIE fresh produce I love - cheers @aldiaustralia #ALDIValue #ALDIPartner #ALDIHaul #Gifted . . I’ve got a few things on the cards that I’m saving for including Kitchen Reno’s and a new place in a few years! I do several things to save money and budget (of which I’ll share more over the next while) and one is shopping at Aldi. I don’t often need to visit a supermarket (usually once a month) but when I do ...it’s always Aldi. I’ve done the numbers and FOR ME & the things I buy I find on average I save about 30% when compared to shopping at other supermarkets (ie. for a shop that would cost $100 at another supermarket, I’ll spend only ~$70 at Aldi). This adds up! . . . And the thing is, there’s no compromise on quality! The quality of produce is second to none and I find there’s plenty of variety. . . Checking-in with friends regularly has always been something I try to do on a regular basis, and even more frequently this year given everything that’s going on in the world. Ask follow-up questions tell me more about how you’re feeling, have you been feeling this way for a while, what’s been happening and making it known that you’re always available for a chat are important. . . 19.01.2022 And that’s a WRAP! A Healthy Christmas Workshops done for this year . And what a ball we had These workshops were a part of the @brisbanecitycouncil Active & Healthy Program (providing low-cost health-focussed activities for Brissie residents). In each of the 3 workshops these last weekends we made: Mango & Passionfruit Bread Apricot & Mustard Pork skewers... Beetroot & Horseradish Dip Christmas pudding bliss balls . . We had fun cooking, tasting and learning about all the nutritional benefits in these REAL FOOD recipes based on whole food ingredients. . . A MASSIVE shoutout to my sponsors @ashgrovefresh and @sherwoodrdorganicmeats for ALL the wonderful produce we cooked and ate at these workshops. We certainly wouldn’t be able to keep these workshops as low cost as they are without your support. Super simple, epically tasty, nutritionally balanced, packed with nutrients, all in one, also freezes well. Can I get a hell yes? .... . I roasted up some pumpkin, parsnip, potato and mushrooms (with garlic and herbs) then once cooked, placed in a casserole dish. Topped with salami, asparagus, frozen peas and tomato slices before pooring 8 whisked eggs I’ve try top. . . Cook for about 30-40 mins and you’re done! Breakfast/lunch/dinner of champions! . . 14.01.2022 Can I get a hands up who wants a wedge of Whole-Baked Tikka Masala Cauliflower? This dish requires literally 3 (THREE) INGREDIENTS and takes all of about 5 minutes of hands-on time in the kitchen. Featuring some of my favourite Asia Tikka Masala curry paste from @aldiaustralia . . I’ve always been a fan of the Asia curry paste range (Red Curry and Massaman my fave) but had never tried the Tikka Masala or Korma Pastes... I’ve definitely been missing out. Don’t do the same a...nd give this recipe a go! . . All you do is this: preheat an oven to 200deg C Mix 2 large dessert spoon-fulls of Yoconut Coconut yoghurt with 2 tbsp Asia Tikka Masala Curry Paste (could also us the Korma paste) in a bowl together. Trim the base and leaves off a whole head of cauliflower. Pour the yoghurt/curry paste mix over the cauliflower and smother the whole cauliflower with with all the mixture - use your hands and make sure it’s well covered! Transfer to a lined baking tray and bake for 1hr. Serve as is, or with a squeeze of lemon juice and sprinkle of parsley. I love to pair it with BBQ chicken thighs and a green salad . . 13.01.2022 How GORGEOUS does the red and green in this tasty little number look? I think I might coin this tart my Christmas Tarte Tatin thanks to it’s festive colours, but tomato tarte tatin when I want to eat it throughout the year . . This would go perfectly as a Christams morning breakfast, or as a starter for Christmas lunch or dinner. Jazz it up by adding some olives or smoked salmon as well, whatever floats your boat. .... . Tomato Tarte Tatin (or upside down tarte) is SO simple to make, you simply put the veggies in a pan, put the pastry on top and bake. Then flip it up to produce your tarte! So easy! Ingredients (all from @aldiaustralia ): 500g cherry tomatoes (you can use all red, or a mixture of some yellow and orange as well, you could also use chopped large tomatoes as well) 5 Asparagus spears 2 T organic sugar 2 T Balsamic Vinegar One sheet of frozen Puff Pastry 1 handful chopped parsley Goat’s Cheese for crumbling on top. . . Method: Preheat oven to 200c. Allow pastry to thaw slightly then trim to a 24cm round. Place a 22cm ovenproof frying pan over medium heat. Add sugar and 1/4 cup water. Stir once, then cook for 5 minutes or until sugar turns to caramel. Carefully add vinegar and stir to combine. Arrange tomatoes and asparagus in the caramel in a single layer and season with salt and pepper. Lay pastry over and tuck edges down into pan. Cut three slits in centre of pastry to allow steam to escape. Bake for 30 minutes or until pastry is golden. Remove from oven and stand for 5 minutes. Place a serving plate over pan. Hold firmly against pan and carefully flip pan over to turn tarte out. Serve garnished with parsley and crumbled goats cheese. . . Well here are the final before/after pics! There are still a few finishing touches I need to do (splashbacks, tiles, and the whole apartment needs painting) but it’s 100% functional and I’m SO HAPPY! 02.01.2022 Spring has definitely sprung with the abundance of STRAWBERRIES and PEARS everywhere . I’ve collaborated with @aldiaustralia to use some in-season Aussie strawbs and pears to make this delicious breakfast crumble - yes I said BREAKFAST. Because it’s so healthy it is totally appropriate for brekky #yourewelcome . . The recipe is SUPER SIMPLE, 100% Gluten & Dairy Free and all ingredients came from the great value range of real foods available at @aldiaustralia . .... . You’ll need: 2-3 large pairs 1 x 250g punnet strawberries, halved sprinkle cinnamon and nutmeg 1/2 cup EACH rolled oats, dessicated coconut, Forresters walnuts (roughly chopped), almond meal. 2 Tbsp organic coconut oil or butter Yoconut coconut yoghurt to serve . . Now do this: Slice the pairs thinly and spread out over the bottom of an appropriately sized baking dish. Sprinkle with some cinnamon & nutmeg. Place in moderate oven for about 15 mins until softened. While pears are in the oven, place the oats, walnuts, coconut and almond meal in a bowl. Bring the crumble together with the coconut oil using you ringers. Remove the baking tray from the oven, spread the strawberry halves over the pears, then spread the crumble over the top. Return to oven for about 20mins or until the crumble is golden. Serve with a dollop of coconut yoghurt And you will feel like you’re in HEAVEN . . If you've been following me for a while you know that I don't mind me a delish #realfood Aldi winner. So when these new fresh cooking kits were released I was excited to try them! I tried the Thai Green Curry last week and heaps of people suggested this Japanese curry so thought I’d give it a go! .... The cooking kit comes with just a load of veggies, a salad dressing and some sesame seeds. I picked up some barramundi and miso paste also from Aldi. And within 10minutes had this delish dinner of japanese salad with grilled miso Barra and sesame seeds! . Have you tried any of Aldi’s new fresh cooking kits (in the fridge section)?
