There’s no need for a fryer, these chips get nice and crispy on the outside by simply baking. What you need Servings: 2 1 block of firm tofu spray olive oil dash of sea salt dash of black pepper pinch of fresh parsley, minced dash of Parmesan cheese or nutritional yeast Instructions 1. Preheat the oven to 190 degrees C. 2. Remove the block of tofu from the packaging and place on a few folded paper towels. Place another couple of paper towels on top of the tofu and top with a couple of cans of food. Leave the tofu like this, to drain off excess liquid, for 10 minutes. 3. Slice the tofu into inch hot chip-like pieces. Lightly grease a rimmed baking sheet with olive oil spray and arrange the fries in a single layer. Spray the tops of the chips with the olive oil spray and then sprinkle with the remaining ingredients. 4. Bake for 20-30 minutes, until golden and crispy. Serve with tomato sauce. Enjoy! This recipe uses zucchini to create grain-free, low-calorie noodles and then mixes it with fresh-made pesto and steamed prawns. The result is as tasty as the original, with half of the calories. What you need Servings: 4 4 zucchini cup macadamia nuts 2 cups fresh basil leaves 2 garlic cloves cup nutritional yeast dash of sea salt juice of 12 a lemon cup olive oil 2 dozen large prawns Instructions For the Noodles: 1. Run a vegetable peeler along each zucchini until you reach the seeds, to create long, flat noodles. Place your zucchini noodles in a bowl. For the Pesto: 1. Place the macadamia nuts, basil leaves, garlic, nutritional yeast, salt and lemon juice in a food processor. Pulse until well combined while drizzling in the olive oil. 2. Peel and devein the prawns, pulling off the tail and then the rest of the shell. For the Prawns and Noodles: 1. Heat a pot of water under a steamer basket. Steam your noodles for about 5 minutes, until tender. Remove to a medium bowl. 2. Steam the prawns for 3 minutes, until fully pink. 3. Combine the noodles with the pesto and top with warm prawns.
