18.01.2022 Celebrate the special dad in your life with our EPIC beer-battered fish sliders! We used ling fillet but any firm white flesh fillet would be suitable. INGREDIENTS: FISH 1 Ling fillet ... Salt & pepper 1-litre canola oil 4 round brioche rolls 1/2 head iceberg lettuce 1 whole tomato sliced thinly BEER BATTER 700ml chilled beer 2 lemon cheeks 400g plain flour 1 tsp baking powder TARTARE SAUCE 200g mayonnaise 2 pickled gherkins (chopped) 1 tsp chopped capers 1 tbsp diced Spanish onion lemon juice METHOD: 1. Portion ling fillets into 4 fillets and season with salt. 2. In a large bowl, combine flour and baking powder with a whisk then slowly add beer (be careful not to overmix). 3. In a separate bowl, mix all ingredients for tartare sauce and set aside in the fridge. 4. Preheat canola oil to 180c in a shallow pan. 5. Dust ling fillets in flour and shake off excess. Dip into the beer batter mixture and then slowly dip in the hot oil. Fry for three minutes on each side or until golden brown. 6. Remove from oil and set aside on a cooling rack. 7. Gently toast brioche buns in a pan. 8. Layer the brioche buns with lettuce, sliced tomato, fish and tartare sauce. Serve with a wedge of lemon and potato crisps.

02.01.2022 Just in time for the weekend! Whip up this quick and easy Grilled King Prawns and Thai salad recipe with just a few simple ingredients. INGREDIENTS: 2 tbsp fish sauce 2 tbsp brown sugar... 1 whole lime juice 6pcs grilled king prawn (peel the shell and devein) Salt Pepper Olive oil Cayenne pepper or smoked paprika bunch mint 150g baby rocket of Spanish onion thinly sliced 150g baby tomato medley METHOD: Thai citrus dressing : Combine all the ingredients in a bowl Set aside in the fridge until needed. Grilled King prawn : Peel and leave the heads and tail on the prawns Cut a bit of the back of prawns to clean and devein Season prawns with salt, pepper, and olive oil on both sides. Preheat pan on the stove on high heat, then pan-fry prawns 2 mins on each side Turn off the heat then add lemon juice to season the prawns and set aside on the serving plate. Thai salad : Combine all the veggies in the mixing bowl Then add the Thai citrus dressing and serve it right away on top of the prawns. Serve!
