21.01.2022 Life lesson: Know your fish fillet . When it comes to fish, a fillet is not just a fillet. Like other cuts of meat, a fish fillet can be segregated into sections, with each section varying in terms of fat-to-flesh ratio and concentration of omega-3 fatty acids. Here is our breakdown of the sections: Tail - The leanest part of the fillet as it gets the most exercise. Better for cooking, as the fat-to-flesh ratio is considered low. It's also 100% bone free and ideal to serve ...to children. Second Cut - Slightly more fatty than the tail, but still not considered as premium as the other cuts. Identifiable by its tapered shape and prominent fat line through centre. Top Loin - A versatile cut with high fat-to-flesh ratio, making it ideal for a variety of raw and cooked dishes. Loin - Equal balance of fat and flesh make this cut succulent, full of flavour and high in omega-3. Belly - The narrow section at the base of the fillet, featuring thick, white fat lines. This section has the highest concentrate of omega-3, and is considered a delicacy. #petunaseafoods

19.01.2022 A mammoth rescue effort is currently underway on Tasmania’s west coast, including in Macquarie Harbour, where more than 450 pilot whales are stranded. Having called Macquarie Harbour home to one of our marine farms for more than 30 years, we are devastated by the significance of such an event, but we are happy to be able to offer first hand assistance in the rescue efforts alongside Tasmania Parks and Wildlife Service and so many other volunteers. We have contributed: - Cargo... nets, lined with 32mm mesh for lifting the whales - Jet boats - A Yakka (heavy works vessel) - Several strops - Workers to assist the recovery as needed - Water bottles and food The rescue effort is far from over but we remain hopeful that many more of these beautiful mammals can be delivered back to the ocean where they belong, and we will continue to support in any capacity that we can . 12.01.2022 We have recently welcomed the arrival of our new dive boat Barometric the perfect addition to our fleet in Strahan. Petuna commissioned local boat builder, Greg Lynd at Lyndcraft Boats, to construct the vessel, which boasts superior configuration and performance our team is very impressed! Having a local boat builder here in Tasmania is hugely beneficial and Greg’s knowledge of what was needed and what would perform to our needs was invaluable.... The little finishing touches made all the difference in making things flow around the boat and in keeping all the specific equipment stowed correctly. This vessel has been a game changer for Petuna. We have significantly cut travel times to our most remote sites, with our furthest lease now only 24 minutes away in calm conditions, in comparison to our previous vessel which took 1.5 hours for the same distance. Barometric is more than just a dive boat it is a first response vessel for workers in distress and a rapid response vessel for our pens and other infrastructure as required. A big thank you and congratulations to Greg and his team at Lyndcraft Boats for a job well done!
