24.01.2022 Its time Its time to refocus on ME Its time to hold myself accountable The last two weeks have been extremely stressful and emotional ... Working full time, holding the fort for a few co-workers who are either on holidays or sick. My youngest daughter has also been sick with the flu. Its bill time, insurance, rego, gas and electricity all due at the same time. I fell back into old habits, seeking comfort in sugary and greasy foods. The result though is not only have I put on 2.5kg in two weeks but my energy levels are terrible, Im bloated, my skin has broken out, and my memory is shot. Even Mentors fall off the wagon, we are all human and need to remember to look to our mentors and Healthy Living Family for support. So, I am posting here today to hold myself accountable, to promise myself that from today I will be back on Phatt and on my way back to feeling amazing and energised. 09.01.2022 These delicious breakfast muffins are a grab and go breakfast on the run My only trouble is getting them to last more than 15 minutes out of the oven without my 2 girls eating them. Chicken and egg breakfast muffin. Stage 2 compatible... Ingredients will make 6 muffins. 420g chicken breast 6 eggs Himalayan salt Pepper 1 tablespoon onion powder 1 tablespoon garlic chives chopped (you can use any herb) 6 tablespoons of water. Cook seasoned chicken breast in a non stick pan. With lid on. About 4min. Chop into small pieces and divide evenly into 6 muffins in a muffin tray. Whisk eggs with the water. Add all other ingredients and mix well. Pour into muffin tin. Bake in preheated oven on 180 degrees for about 15 minutes. Enjoy. 1 muffin is 1 breakfast serve on stage 2. Pour into muffin tin. Turkey & Zucchini Spaghetti (stage 2 lunch) Makes 1 serve... 100g of turkey mince 1/2 large tomatoes(fruit allowance) 2x spring onion salt Pepper Paprika 1/4 teaspoon Oregano 1/4 teaspoon Parsley to your liking 1/2 clove of garlic cloves Splash of tamari sauce 350g Zucchini Dice onion and garlic and add to non-stick pan with a little water and tamari sauce. Add turkey mince and pan fry till browned. Add diced tomato and some more water to the mix. Cook down tomatoes until soft. Add all spices and the remaining tamari sauce. Simmer for a little while. Spiralise your zucchini into wide noodles, add to the turkey mince, cook for 2-3 minutes until noodles are tender. Serve and Eat Immediately
