20.01.2022 Tonight was one of those rare occasions that I crave red meat. So I sautéed a ton of finely chopped mushrooms, then added to grated onion, garlic, zucchini, carrot, Parmesan, ricotta, breadcrumbs, an egg and lean beef mince, and rolled into bite-sized balls. I browned them and then slowed-baked with a homemade tomato sauce and a sprinkle of cheese, and served with whole meal pasta and greens. Unfortunately I have no photos... the kids smashed the lot! #hiddenveggies #nutritiousanddelicious #phytnutrition

17.01.2022 Some of you may know that boxing is my thing (along with running and HIIT). It's my go-to exercise when I'm exercising for myself. What you may not know is that I obtained my black belt in Zen Do Kai martial arts when I was 20, and also trained in Muay Thai kickboxing for quite a number of years. While I stopped training in martial arts when I moved to America, I have continued to box for both my physical and mental health. Boxing is a great exercise for strength, power and cardiovascular health, and it's also a fantastic outlet for frustration. Last weekend, I completed my Level 1 and Advanced Thump Boxing courses, and am now a Thump Boxing Certified Trainer! So if anyone is looking for a boxing trainer, or to incorporate boxing into their fitness regimen, just get in touch.

01.01.2022 For those who aren’t aware, I’ve been struggling with a chronic knee injury for almost five months. It has prevented me from working with kids with disabilities as I’ve been unable to get down and crawl and skip and jump with them, as they follow by copying rather than following verbal instructions. I’ve been forced to rest and only do resistance work and boxing, no running, jumping or burpees In the last few weeks it has felt a little better, more mobile with less pain. S...o I started with a few five minute jogs. Today I pushed it to twenty mins non-stop and felt like I could go way further. It’s tempting to push and get back to my easy ten km runs I was doing five months ago, but I don’t want to risk a relapse.
