22.01.2022 Another day...another cake! Here’s my chocolate vanilla ciambella topped with chocolate ganache, orange zest and touch of icing sugar. It’s always a debate which flavour must be on top and I can never decide. Sometimes I’ll add chocolate chips for an extra hit of decadence. This recipe is a variation of my lemon ciambella from my cookbook, basically this time not adding lemon, instead halving my batter to add dutch cocoa powder. You can either split the layers in the ciambell...a/bundt tin or alternate choc/vanilla batter in large spoon dollops and swirl the batter. 20.01.2022 Homemade lasagna is definitely the perfect pasta comfort food. I love my version kept simple with rich sugo (sauce), generous amount of cheese, layered with mozzarella and topped with parmigiano. Sometimes I might add a touch of cheesy béchamel which I know is a never ending debate whether it should be included! Either way I love it and when making lasagna I always create two trays, one is placed in the freezer for another day. Knowing I have lasagna ready for another meal is... also a comfort! . . . My travel memory pic of gorgeous calm water views, no tour group, no crowds, this was the start of our day of strolling around on our own. 09.01.2022 Italy views...meet you in Capri! The most common question ‘when can we travel again?’ is in nearly every conversation. Yes, still feeling slightly trapped and miss travelling as we’re now living in lockdown no.4 which will hopefully cease end of the week. I remember this Capri view and thankfully it wasn’t peak season when we last visited. It’s the typical tourist spot for photos but it was just us and a few others. We were able to stand there for a while, feel the sea breeze... and witness beauty. 08.01.2022 Castagnechestnuts! I adore roasted castagne and love the family memories. From devouring them as street food during travels in Italy to roasting them in our home. Mum and dad would sit at the kitchen table with a bag of castagne, they would score the shell (major effort but worth it), roast them on a tray then wrap and rest them in a tea towel to help steam which made it easier to peel the shell. While still wrapped, you would gently press them down and hear a slight crackin...g of shells separating even further. Some families might even boil them before roasting to help to peel the shell. I even remember a large fry pan my dad created once with multiple holes in the base for roasting also. Whichever way we had roasted them there was always a mountain of shells left on the table while we devoured the creamy, velvety and smooth taste! . . 01.01.2022 Homemade vanilla and chocolate custard! A memory that takes me right back being quite young and watching mum stir custard on her stovetop. Families have their own versions and the ongoing debate of using egg yolks/whites/whole. Mum would separate eggs - egg yolks for vanilla and egg whites for chocolate. Sometimes the rind of half a lemon would be added whilst heating and stirring vanilla custard. Rich cocoa was added for chocolate custard and sometimes dark chocolate pieces ...melted through for extra richness...as I’ve done here. I love how you can control thickness, sweetness, flavour and the many uses - create crema pasticciera/creme patissiere as the base, light version as zabaglione, creme legere/diplomat (folded through whipped cream), creme bavarois with cream/gelatin for a firmer texture. My family custard recipe will definitely be in my next cookbook. Simple and comforting but also decadent. The best part is served warm in a bowl to devour! . . . .
