23.01.2022 We've had a busy few weeks over at the Smokehouse, but we're back with our team profiles. Say hello to Aaron... Aaron has been at the Smokehouse for 2 years and he is our Dispatch and Receivable superstar!!... Aaron grew up in Griffith NSW, and before working with us was at Canberra Milk for 16 years. His favourite product is our streaky bacon to make oysters Kilpatrick. In his spare time, Aaron loves spending time with his 3 handsome sons and his beautiful wife and an occasional schooner at the pub!
23.01.2022 Happy Australian Bacon Day! This is by far our favourite day of the year! At Pialligo Estate Smokehouse we are proud of our products, a key favourite of course being our award-winning Smokehouse Bacon.... With a perfect lean to fat ratio, our bacon has minimal shrinkage and does not lose moisture. Our bacon products have a well balanced flavour with a smokey aroma and excellent texture. The critics also love our product, with our smoked and cured bacon winning Best Artisan Bacon in Australia in 2014 and 2015.

Originally from Philippines, Will moved here in January 2019, and started with us in March 2019.... Will is actually a Chemical Engineer , and his favourite Smokehouse product is our Streaky Bacon which he loves to use in fried rice! In his spare time loves to explore Canberra and surrounds with his young family.
21.01.2022 Everyone say hello to Fiona! She's the wearer of many hats at the Smokehouse - from sales, to customer service, logistics, and admin to name a few. Plus, she's the gorgeous face that you see at our market stalls! Fiona started with the Smokehouse in May 2016, and she truly is a valuable member of our team.... Although it was a hard decision as she likes them all, her favourite product is our Smoked Duck, which she uses in a mushroom and red wine risotto. A fun fact about Fiona is that she actually worked on private yachts in the Mediterranean for 7 years, and in a past life was a massage therapist!

Isaac's favourite product is the Spicy Pork Tasso can’t resist a tasso sandwich!! In his spare time loves to watch footy, particularly his beloved Roosters, hang with his mates and play video games.

04.01.2022 Time for another one of our Meet the Team profiles This is Alex. He’s originally from Poland and learnt his craft in Ireland. Alex has worked at the Smokehouse for 6 years, with his favourite product being our Duck Prosciutto and Full rasher bacon, though finds it difficult to pick as it’s like favouring your favourite child!!!... Something about Alex we may not know. he thinks he’s better at football than he really is!!! Alex has been our fantastic leader for 6 years and his passion for the Smokehouse has been amazing, it is like his child. He has built a great close knit team who all respect and admire him. He has lead us through good times and bad Awards and Fires and don’t forget Christmas Chaos! His work ethic inspired his team to excel and we’ve also taken on his passion and will to get the job done!! We will miss Alex’s presence in the Smokehouse, though we wish him all the best with his next venture, although we do know we will see him regularly for his Bacon fix. Alex its been a crazy ride, thank you

03.01.2022 Everyone, say Ciao to Dario our Butcher!! Born in Rome, he grew up between Rome and Carpineto Romano, and learnt butchery in Rome with Sicilian influence from his mum’s side. Dario came to Australia in 2007 and worked in hospitality for 12 years. He joined the Smokehouse team a year ago.... His favourite product is Guanciale, in a traditional Roman Carbonara. In his time off, Dario likes to go fishing, cook, entertain friends and go to the pub like a REAL Aussie.

INGREDIENTS 1x Pialligo Estate Smokehouse Smoked Ham Hock (available from your local independent grocer)... 500g Split Peas soaked 2 carrots finely chopped 2 celery stalks chopped 1 onion 1 bay leaf 1 bouquet garni 2 thyme sprigs 1 garlic clove 1 litre chicken stock 1 litre water PROCESS - Put in slow cooker on low for 8 hours - Then remove hock and blend remaining ingredients - Shred cooked hock skin removed and return to soup - Enjoy with some fresh crusty bread!
