11.01.2022 There is nothing more warming than a hot Chicken Noodle Soup on a cold night like tonight. This nutrient dense soup is both delicious and nourishing. Your taste buds will love it and your body will thank me. Recipe: Chef Pete Evans Chicken Noodle Soup:... Ingredients: -1 onion, chopped -2 carrots, chopped -1tbls coconut oil -3 garlic cloves -4 thyme sprigs -1 bay leaf - 1.25lts chicken broth (organic, grass fed, local) -150g kelp noodles, roughly chopped -1 1/2 cups shredded leftover chicken - Salt and pepper to taste -Flat-leaf parsley for garnish Method: 1: Heat oil in deep saucepan over medium heat. 2: Add onion, garlic, carrot, thyme & bay leaf. Cook for about 5mins or until vegetables soften but not browned. 3: Pour in chicken broth and bring to the boil. Reduce ot low heat and simmer for 20mins. 4: Add kelp noodles and simmer for 5mins until tender. 5: Stir in chicken and simmer until heated through. 6: Season with salt and pepper. Sprink with parsley for garnish. The chicken bone broth and kelp noodles are what makes this soup healing not only for your gut but also your immune system. So no cutting corners. Use organic and grass fed chicken broth- preferably homemade but can be purchased from your local health food shop. Kelp noodles are also available from your local health food shop. (Variations: I love using a combination of chick and beef broth for a heartier flavour. Pete Evans uses Celery but I omit.) Enjoy xo

11.01.2022 Lemon & Coconut Bread (GF/ DF/ Nut Free/ Refined Sugar Free) I made this deliciously refreshing Lemon & Coconut Bread yesterday. Quick and easy to make (40mins incl. cooking) so perfect for those who love eating healthy but have little time spare to bake.... Ingredients: 2 cups desiccated coconut 2/3 cup coconut flour 1tsp baking powder 2 lemons 3tbls honey 6 eggs Method: 1- Pre-heat oven to 180 degrees and line a loaf tin with baking paper 2- Place dry ingredients into food processor and blend until flour like consistency. 3- Grate rind of 1 lemon and mix into dry ingredients 4- Juice lemons and add with eggs and honey. Wisk until combined 5- Add wet ingredients to dry ingredients and blend until combined. 6- Place into oven and cook for 30mins or until skewer comes out clean. ENJOY Recipe: Real Food Pledge

In a society where everything has to be done 10mins ago, we are forever chasing our tails and food seems to be the biggest area of life that people dont have time for. It has to change and the time is now. Nutritious meals can be made in 30mins and we have the internet at our fingertips with hundreds of recipes.
