24.01.2022 Further to the previous post, I have Amber & Rahjang & I can honestly say whilst Amber & Rahjang are superb fruits in their own right there’s no comparison to my selection, it’s without a doubt one of the best crisp jacks I’ve eaten! 18.01.2022 Nothing could be easier than a baked ricotta. This one lightly salted with salt crystals, @piconeexotics pepper, anointed with EVOO & smothered in this season left over syrup from quince roasting. Bake for approx 1 1/4 hrs @ 180 c or to your preferred colour. Delicious straight out of the oven whilst still hot, when cold serve with tomatoes, in salads, with fruit, slices on sourdough with prosciutto, cannot go wrong!

Yet to try the fruit, trees are 5 m high & have been flowering for 5 years but haven’t set any fruit as yet! Being a fruit grower of unknown fruits is a test in patience!

This lot we picked with the help of our friend will be dried into black pepper!

05.01.2022 Re post Thit Kho, Vietnamese caramelised pork belly , recipe by popular request! 500 g pork belly cut into 2 cm slices & about 12 cm long. 50 g sugar ( I use brown ). 2 Tbsp water. 4 spring onions, crushed & cut into 5 cm lengths... 750ml coconut water, may need to add more. 1/3 c fish sauce. 3 chillies cut into quarters length ways - or to taste. Vietnamese mint, coriander or nasturtium to garnish. In a wok make a caramel with sugar & water until its sticky, don’t overcook. Add pork & toss over high heat to coat, allow pork to take up the caramel & pork is nicely coloured & charred. Add coconut water, bring to a boil, skim off any impurities. Reduce heat to low simmer, add fish sauce & stir in. Simmer for about 30 mins. Add spring onions, stir. Simmer for another 30 mins, by this time liquid will start to thicken, stir occasionally, add chilies, stir to coat pork in the sticky sauce, do not dry it out. Garnish. Serve with rice & wok tossed veggies. Tag me if you approve! See more
