18.01.2022 Piefection Bakery cropped up in my circle of friends as having the best pies in Cairns. Of course, the Meldrum's loyalists in our group would beg to differ so I... had to go check them out. Piefection is out at Gordonvale. It's a bit far for my regular rounds, but they turned out to be a great breakfast stop before heading up to the Tablelands for the day. I had their special for the day: Corned Beef with White Sauce. Yum! A hearty filling with a decent amount of sauce, covered in beautifully rich and flaky pastry. Better than Meldrums? Not so sure about that. On par? Oh yes! See more

07.01.2022 Most locals know and love Jackley's Bakehouse - founded by Bec and Dale Jackley in 2012. Their purpose-built cake studio at Mt Sheridan Plaza features large dis...play windows which showcase their cake decorating skills (they also stock Piefection Bakery pies!). It was a pleasure to meet with Dale and a wonderful young man name Tyler yesterday. Tyler is the second person Jackley’s have employed under the Back to Work program’s Youth Boost payment. The scheme was the difference between hiring or not - and the extra staff have allowed more time to focus on growing the business. The first Jackley’s Bakehouse at Raintrees was primarily a bread and pie store but the business started to take a downturn with competition from larger supermarket chains. The couple looked for a way to diversify their business in order to survive and started focusing on cake making. As bread production wound down the cake business flourished providing the opportunity for the Jackley’s to expand their team.
