25.01.2022 FLATHEAD CANNELLONI RECIPE Some people asked for more recipes so here is a ripper from our Ontour Fishing Australia fisherman and chef Matt Roman, from Piefecti...on Gourmet Pies Place 1kg flathead filets in blender with 1 cup of cream and two eggs. Blend until smooth. Fold in 500g ricotta and 1 bunch of thinly sliced flat leaf parsley. Roll mix into fresh lasagne pastry sheets. Bring 3 cups of milk to a simmer, add 75g butter and 75g of flour. Mix well. Add 2tblsp of tomato paste and 150ml abalone sauce. Pour over cannelloni rolls and add two handfuls of mozzarella cheese. Bake at 180C for 20 mins or until golden brown. Then enjoy! 17.01.2022 Hi fellow enthusiasts, a few weeks ago I was given the tip about this legendary joint in Brisbane. I immediately hit the net and was left gobsmacked upon s...eeing the vast varieties of crazy ’s. Thinking this was too good to be true, I had to see first hand how legendary this place actually is. So Tuesday I jumped in the rig and headed south to Bris Vegas. After a 2 hour drive and non stop thinking about these ’s I lobbed in the suburb of Coorparoo. Directly across the road from the train station you will find Piefection This place isn’t your average joint. it’s a mix of insanity, ridiculous, outrageous plus much more !!!! The man behind this insanity is Matto Roman who founded this place 10 years ago. Now my good mate of mine Arthur Macdonald continuously tells me I’ve got issues !!! I now can confirm Matt has got MASSIVE ISSUES !!! This champion stuffs whatever he can think of into a and turns it into a master piece. Matt’s a born and bred city boy who has spent the majority of his life cooking high end food. After leaving school and finishing his apprenticeship Matt spend years working for large hotel chains then heading to LA to work at the famous Sheraton Hotel. After years of dishing up fine dining in the good old US of A, Matt decided he had enough and headed home to set up his own business. I couldn’t get over how smooth and calm the engine room was. This place is seriously busy but every staff member was causally going about their business pumping out after while being a cool as a cucumber !!! After looking and drooling over these ’s for several minutes it was time to tuck in. All of these are made with extras !!!! It’s like going to the pub and ordering a steak then the attendant says would you like a prawn or calamari topper with that ? Well that’s exactly what happens here. - Jack Daniels BBQ Pork Rib with mash and slow cooked pork topper. This was OUTSTANDING !!!! - Chunky Steak with onion rings and bacon topper. Insane !!!! - Lasagne !!! The best !!!! After smashing all the above, something caught my attention. Out of the corner of my eye I caught a glimpse of the I wanted to review. This is one of Matt’s best creations The Osso Buco THE REVIEW 1. Value for Money Every gourmet is $7.50 !!!! Yes that’s expensive but when you see the ingredients that go into these ’s and the toppers that are on these ’s they are worth every cent. Plus these ’s are a very good size and bloody heavy. 9/10 2. Meat Ratio Every was almost full. Very little room for any extra fuel. 9/10 3. Meat Flavour OMG OMG !!! Osso Buco is off cut braised Veal Shank !!!! Mixed with onion, tomato, veggies. Then slow cooked with beef stock, red wine & pepper for extra flavor. Just to top it off Matt adds special home made tomato sauce. The taste was stupid insane crazy good !!!! The flavor was unbelievable !!! This was a easy score to give. 10/10 4. Pastry The top was so flakey and full of flavor, while the sides & bottom were firm and very tasty. This was a really heavy and the pastry lasted the journey. 9/10 5. Temperature - Perfect temp !!!! Every was ready to go. Zero complaints. 10/10 Overall 47/50 The flavor of this was the best bit by a country mile !!!! The tender meat chunks and all the ingredients were in incredible. You could easily taste every single ingredient with every bite. The $7.50 price tag shouldn’t put you off because it’s worth every cent. Every I tasted were of the finest quality. Choosing a at this joint is like someone asking you to choose your favorite child !!!! So don’t grab 1 !!!! Grab 3 or 4 !!! Matt has a serious talent of making quality food plus the passion to make even more outrageous creations. The excitement and look on his face when we cut these ’s in half was priceless. Matt expects excellence and his ’s didn’t disappoint. This is yet another example of small business success from hard work and determination. If you cannot get over to Coorparoo don’t stress Matt has another store over at Mt Gravatt , plus his ’s are being sold in wholesale outlets across SEQ. Once again another huge thanks for having me in buddy. Your passion for food and stuffing crazy ingredients into ’s is inspiring. Plus your massive obsession for 4WD’s/Fishing and catching the 2.8/3m flatty’s, we could have easily talked for hours & hours. This is one place I will be coming back to make no mistake !!!!
